What is your favorite "fancy" vegetable dish?

I was planning Thanksgiving with my sister yesterday. We were talking about the menu and I am going to have a baked sweet potato/apple dish (which I will make up as I go, SB style) and want another to serve. I have others we like but this is an opportunity to do something new. I though about Marva's creamed spinach, which is delish, but DH won't eat it...

So what are your ideas?

Chris, my favorite isn't fancy, but it's good. Pan/oven grilled fresh asparagus. Just pare boil a minute or so, toss it with a little OO and seasoning and grill, walla. I often grill it in a grill pan on top of the stove too.

Pompom2 made the best mock hollandaise sauce that I use with this and she always used it with salmon too. I just searched her recipe......"I just take a glass mixing bowl and put in over a pan of hot water on the stove. Then I put in a few squirts of lemon juice, about 2 tsp of dijon mustard, some margarine, little salt and 2 egg yolks. Then just double-broil it until all mixed and warm."

Mock Potato Pancakes MMMMMMMMM

Okay, I just made this (along w/a side salad last night for my dinner and WOW it was good) I would love to take the kudos for this recipe but I cannot, it was originally on the recipe board as Atkins by 'Meg' and I changed it up a bit so hopefully I did it right...here it is:

16 oz bag frozen cauliflower
2 lg eggs - beaten well
I can't belive its not butter SPRAY
olive oil
salt, pepper, onion to taste
plain ff yogurt -optional to top with...

1. Put cauliflower in the microwave until it is cooked (boiling it makes it more tender for this but either method is fine..) Drain it well. Put caul. in mixing bowl and mash it (you can use a food processor or a potato masher) until it forms a paste if soft enough for lightly chunky...the smoother it is the less it will fall apart..

2. Pour eggs, onion, salt & pepper into a bowl w/caul and mix it up well.

3. Pour some extra virgin olive oil into the frying pan (med heat). Ladle a small amount into the pan and push the sides to make it somewhat circular shape so its easier to flip. Cook intil brown and flip carefully - i sprayed both sides w/the butter spray for flavor ... You can put a dollop of plain yogurt w/some chives sprinkled in or garlic salt even for more taste-optional

*you can make the same thing in hashbrown form (basically if it falls apart when flipping just fry them as hashbrowns and WOW this is really tasty!)
