I just had 2 eggs, scrambled (no milk) with 1 slice of cut up turkey bacon.
Tossed in 1/2 cup of pinto beans, and topped with a little low fat shredded cheese. It was pretty good!
Lunch will be a tuna salad, salad greens, tomato, tuna and lowfat mayonnaise rather than dressing, and some fruit.
Dinner is a low carb bacon cheeseburger quiche from a low carb board that I've made beachy by using low fat/fat free products and will be using ground turkey tonight instead of the ground beef (just for a change)
I don't usually post my menus cause I'm so afraid that someone will tell me I'm doing this all wrong, but my scale is telling me otherwise

B: spinach frittata; 2 slices turkey bacon

S: 1 wedge laughing Cow lite; 6-1" chunks honeydew

L: 4 oz. grilled chicken; 1-1/2 cups broccoli, cauliflower & carrot mixture

S: 1 cup honeydew & apple chunks

D: green salad with blue cheese dressing; 2 slices small, all meat pizza*

*this was a "planned off-plan" meal, but since I left most of the crust, I'm hoping it won't skyrocket my blood sugar! We'll see in the am. I also had too much fruit, I think. But the honey dew was just about ready to toss...some excuse huh???
