Harvest Wheat-Berry Salad

Wheat berries are whole, unprocessed wheat kernels; their robust flavor and chewy texture make them an excellent salad or stuffing ingredient. Serve this as an unusal additional to lunch or a decidedly different dinner side dish.

Serves 3 - 4
Ingredients
1/2 cup wheat berries
1 1/2 cups reduced-sodium chicken broth
1 tablespoon extra-virgin olive oil
1 tablespoon walnut oil
3 tablespoons lemon juice (from one large lemon)
1 tablespoon apple-cider vinegar
2 large scallions (white and light green parts), thinly sliced
1 crisp red-skinned apple, unpeeled, cut into small dice
1 large celery stalk, diced
1/2 cup dried cranberries
1/2 cup walnuts, toasted
1/2 cup finely minced Italian parsley leaves
Pinch ground cinnamon
Pinch of sugar substitute
Salt


Instructions
1. Combine broth and wheat berries in small saucepan and place over medium heat. Bring to boil. Reduce heat to very low; cover and simmer 35 minutes, until most of the water has been absorbed and the kernels are tender yet chewy. Drain any excess water. 2. In medium serving bowl, whisk both oils, lemon juice, and vinegar. Add drained wheat berries. 3. Add all remaining ingredients to bowl; toss to coat. Season with salt, to taste. Refrigerate, covered, until ready to serve. Serve cool or at room temperature.
