Morning y'all!

Yesterday I ran errands most of the day, so my meals were out. Here's what I had:

Phase One

1 TB natural peanut butter

2 eggs
spinach
cheese

string cheese


Out:
Chef Salad (no ham or bacon) turkey, chicken, rb and cheese
Ranch dressing (side, fork dippped)
Water w/ lemon

Out:
Blackened salmon filet
mixed veggies
salad (side, fork dipped)

1 quart decaf green tea w/ stevia
1/2 quart water

Phase 1

Breakfast:

Green Tea
8oz with metemucil
Omlette....
1 egg/1 egg white
Roma Tomato Slices
1 slice provolone cheese

Lunch:

1 can of light tuna
4 romaine leaves, diced
Low Carb Ceasar Dressing

Snack:

1/4 c. mixed 'nut-trition' nuts

Dinner:

Southwestern Chicken (recipe below)
Broccoli
Small Side Salad

Quote:
Southwestern Chicken (P1)
4 boneless chicken breast halves, butterflied
2 roma tomatoes, sliced
4 jalapeno peppers, chopped
1 (1 ounce) package dry light Ranch-style dressing mix
2 cups shredded low-fat Colby-Monterey Jack cheese
8 slices bacon (turkey bacon can be used)

Directions:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Lay the chicken breasts out flat and sprinkle with Ranch-style dressing mix. Sprinkle a bit of cheese onto each half of each breast. Place 2 tomato slices and a sliced jalapeno pepper onto each one, and sprinkle more cheese over the tomato and pepper. Fold each piece of chicken over, and wrap with 2 slices of bacon. Secure with toothpicks. Place wrapped chicken into a baking dish, and cover with aluminum foil.
3. Bake for 1 hour in the preheated oven, or until the chicken is no longer pink, and the juices run clear.

Here's Sunday menu

Today's menu: Phase 2

Breakfast: blueberries and yogurt
Snack:
Lunch: pastrami and pepper jack cheese on ww sourdough, 1/2 a cantalope and coleslaw
Snack:
Dinner: large salad with leftover green beans and a couple of hb eggs and cannoli beans in the salad


No more eating after 7:30 PM.

Phase 2

Thursday -
B, boiled egg, grape tomatoes
L, 1/2 avacado/sliced tomato with T OO, coleslaw
D, 4 oz lean hamburger patty, green beans, coleslaw

Friday -
B, boiled egg, spinach
L, grilled chicken breast, steam veggies, 1/2 avacado
S, 2T peanut butter, celery
D, ate out....fried fish, coleslaw,

Saturday -
B, 2 pan fried eggs, 2 T peanut butter, 1/2 c plain ff yogurt
L, 2 oz pastrami, lettuce like roll ups
D, bbq beef, no sauce, coleslaw, green bean salad,
D, slice real...rum pound cake

Sunday -
B/B, 2-3 scrambled eggs, slice 2% cheese, 6 grape tomatoes
S, 2 oz pastrami, celery
D, Coll's crack slaw, green bean salad, coleslaw

Kitchen is closed, no eating after 7:30

Phase 1.5

B: 2 egg omelet, 1/2 cup mozarella cheese, 3 slices turkey bacon, 3 grape tomatoes
L: small taco salad with 1/3 cup rf mexican cheese and carbwell ranch dressing
D: 8 oz. hamburger, 1 oz. pepper jack cheese, 4 oz. velveeta cheese dip, 2 small pickle slices, 1/2 c. coleslaw
Dessert: 1/2 grapefruit with sprinkle of Splenda - my first fruit in a month! We will see how the weigh in is in the morning! Here I come phase 2!

B: 2 buckwheat pancakes w/Brummel and Brown & sf maple syrup.
L: 1 6 oz. can of tuna w/lf mayo & 2 rye crisps
D: 1/2 bbq chicken breast, 1/2 ear corn on the cob, ~3/4 cup couscous, cuke& onion salad
I did eat the peach slices off of DBF's peach cake after dinner.

4+ liters water & vitamins.
