Help-what can a bring to a dinner party?

Hi Everyone,

I need some advice again!

DH and I are invited to dinner tomorrow night--I'm doing a second round of Ph 1 and he is starting Ph 2. It was already ackward enough to explain that we were dieting and just wanted meat and a salad--something easy (plus we don't eat beef or pork)--I offered to bring anything at all. I felt like I was being so particular, and like I said, very ackward. After some consultation, our friends phoned as back and agreed to make chicken salad--I had to push the salad dressing issue, and in they end, we agreed I would bring some of mine own. Ugh. I really would have rathered cancelled, but DH didnt want to be rude. So, then there was the "I suppose you can't have dessert....". I said they could serve fruit and DH would have some--or anything, that I just may not have any.

Doese anyone have any ideas for a dessert that I could bring?

Thanks for all your help!! I would be lost without the bb!

make your own cheese cake
just substitute splenda for the sugar and use nuts for the crust
the rest of the ingredients (eggs, cream cheese, vanilla extract) are all legal
i think i have see recipes with sour cream too
the cheese cake i made
3 eggs,
3 blocks(8 oz each) of cream cheese( i use 2 that were 1/3 fat, and one fat free)
1/4 cup of splenda
1 tsp vanilla extract
mixed together
for the crust.. i crushed almonds and sprayed a pan with i cant believe its not butter and placed the crushed almonds in the bottom
bake at 325 for 45 mins
and let sit in frig overnight
yummmm

Just a drive by until later. The cheesecake sounds soooo good Dana.

Wow, you don't have much time...are you wanting P1?

I made dh a pie last week, Key Lime Ref. pie
1 box sf lime jello mixed with 1/4th c boiled water, mix that into 2 cartons ind. serving size, 6 oz sf ff lime yogurts, then fold in the small 8 oz size ff cool whip into the mixture. I let that set in the bowl in the ref. about 30 min then poured it into a graham cracker pie crust and chilled it overnight, he said it was great. The kiddos liked it too.

That would be P 2 with the flavored yogurt and it's a lot of cool whip, it was my first time to make it, I suppose one could use 1 cup and see how that would work and that would make the cool whip serving size less. If and when I eat it, I won't eat the crust, but the pie mixture is SBD Phase 2 legal.

I guess if we wanted to make it P 1, we could use ff ss yogurt and put lime juice and art sweetner in it. There's nearly always a way.

I've also fixed lime jello and mixed about 1/2 c cottage cheese or ricotta in it, it's pretty good....nothing spectacular to take out I guess but it works.

What about that peanut butter cookie, anyone made those? It's in the recipe thread I think.

Cucumber Salad:

3 large cucumbers washed and thinly sliced
1/2 c. low fat or non fat sour cream
1/2 c. minced red onion
salt and pepper to taste

Mix all together in bowl, cover and put in frig until chilled.

It's sooooo good!!! Cool and crisp!

Thanks everyone! Great ideas. I ended up making the cheesecake. The batter tasted wonderful! I will let you know how it goes over. I'm also making the ginger-tofu-miso salad dressing.

I need to start another thread to find out how people deal w/ informing the dinner party hosts about their dieting needs. I still feel a little guilty about the whole thing.

Your body and health is important to you, let the world know. BUT don't be rude like I am. I am a foodnazi when it comes to gatherings I don't let anyone bully me around. I used too, and that created a nasty cycle within me that led me to be a hermit for a couple of years and disown just about everyone who ever offered me food. I have sugar issues, and issues with chemicals like nitrates. I plain and simply cannot eat them. In addition, pasturization makes many foods unsuitable for me, they cause instant cravings at best. It can be a pain but do whats best for you. Instead of going the diet route I appeal to people who want to be healthier and explain that I personally will not, cannot put refined food like that in my body. An example of one gathering is the man who went vegetarian and brought an En-Cor vegetarian meal and claimed that to be healthier then the shredded pork butt that was cooked naturally, without sugar or chemicals. Yah your carbs in a box was a great choice....ewwwww. I had brought fresh veggies, which he didn't eat....We talked about it, I kinda made him mad when he said Atkins will kill you. I kinda went off on him. Also the big businesses I refuse to support etc. It's still not very nice but better than violence hehe.

My point is never be afraid to stand up for being healthy. Who cares what anyone else thinks, you are the most important person in your world.
