Getting Creative With Salads
July 25-31 is National Salad Week Tired of eating the same salad day after day? You can cure the salad blues by experimenting with new and exciting ingredients. Here are a few alternatives to typical salad fixings that are approved for all Phases. Instead of lettuce, try baby spinach or a spring mix. Instead of tomatoes and cucumbers, try grilling squash, eggplant, artichoke, and zucchini with a touch of olive oil. Instead of cheese, add avocado or olives. Instead of grilled chicken, toss in grilled salmon, tuna, shrimp, or even tofu. Instead of croutons, top with pecans or other more exotic nuts. Instead of store-bought salad dressing, make your own with a little extra-virgin olive oil, mustard, balsamic vinegar, and garlic. Adding variety to your salad possibilities will help you prevent meal boredom and potential backsliding.
