Vacation food ideas??
I will be staying in a cottage with a fully equipped kitchen.
I have already cooked ahead bean cake blueberry muffins, flax bread, boiled eggs, grilled chicken breast strips, black bean brownies and I will bring in the car, cheese sticks, mixed nuts, homemade yogurt, bottles of water and turkey sandwiches made with either flax bread or whole grain bread. Once I arrive, I will be able to go food shopping for the week (others in the cottage are "non-SBDers". I plan to make more yogurt while there and stock up on chicken breast and cans of tuna and slamon for salads and patties. Any ideas for meals while I'm vacation and the 12 hour drive? Thanks!!!! |

I am not sure of any other idea right now but i will look aorund and see if i can find you any ideas. But i would love your recipes for the bean blueberry muffins and the black bean brownies

Line a muffin tin with paper liners and fill 3/4 full with batter. Sprinkle with blueberries and bake for about 30- 35 minutes until knife comes cleans. |

Black Bean Brownies
1 can (15 oz.) black beans (drained and rinsed) 4 eggs or substitute 1 cup sweetener 1 tsp. vanilla 1 tsp. instant coffee granules 3.5 TBSP cocoa powder 1 TBSP oil 1 TBSP baking powder Sf choc. chips or broken SF chocolate bar chopped walnuts Blend in blender until very smooth. Spray 8x8 baking pan with PAM, pour in batter and sprinkle with nuts and chips. Bake for 30-35 minuntes. You won't know that they are made with bean are a nutritious snack! |
