Vacation food ideas??

I will be staying in a cottage with a fully equipped kitchen.

I have already cooked ahead bean cake blueberry muffins, flax bread, boiled eggs, grilled chicken breast strips, black bean brownies and I will bring in the car, cheese sticks, mixed nuts, homemade yogurt, bottles of water and turkey sandwiches made with either flax bread or whole grain bread.

Once I arrive, I will be able to go food shopping for the week (others in the cottage are "non-SBDers". I plan to make more yogurt while there and stock up on chicken breast and cans of tuna and slamon for salads and patties.

Any ideas for meals while I'm vacation and the 12 hour drive?

Thanks!!!!

Bean Blueberry Muffins

1 can (15 oz.) white beans
4 eggs or susbstitue equivalent ( I used 2 eggs and 1/2 cup liquid egg white substitute)
1 cup sweetener ( I used 1/2 cup Splenda and 1/2 cup Erythritol)
1 TBSP baking powder
1.5 tsp vanilla
3 drops blueberry Lorann Oil (optional)
3/4 cup blueberries (fresh or frozen)
1 TBSp oil

Preheat oven to 350

Blend ingredients except blueberries in blender until smooth. Line a muffin tin with paper liners and fill 3/4 full with batter.

Sprinkle with blueberries and bake for about 30- 35 minutes until knife comes cleans.
