Does anyone have.....

I really need a recipe for Taco Salad the SB way!! Can anyone help me. I kinda know what to put in but I need some input from others to make sure mine is right! Thanks!!!!!

I'm no expert Becca, I hate to see an unanswered post. Well...pretty much EVERYTHING that normally goes in a taco salad is legal. When I make mine, I use ground beef (or ground turkey), refried beans (from the health food store) lettuce, cheese tomatoes, black olives, sour cream, you know...the usual stuff. The only thing I do different is omit the shell, and season the meat myself. I use cumin, taco seasoning and garlic. I've heard of some people melting cheese (sliced from the deli) and making taco shells with it. I haven't done that, and don't think I will. HTH

I use a good quality steak (mostly lauras lean beef right now until I find a better butcher) I freeze it slightly then slice it paper thin
I thaw some shrimp and shell them
Put in a big bowl that has a lid.
I add to this
juice of one lime, one lemon
one large jalapeno chopped or serrano or scotch bonnet if i want it super hot
one large garlic clove chopped
shake of cayenne pepper
shake of chili powder
shakle of hot sauce ( I have several)
little salt and pepper
sliced onion
cubed tomato
sliced green pepper
splash of oil, usually olive

I close the lid and shake then stick in the fridge, sometimes a few mins, sometimes all day.

I just saute it up, drain the juice, then fry a little, just until the meat is done and everything is hot.

I either serve it alone, or on lettuce, or with lo carb tortillas


I make my own salsa, usually just pico de gallo

1 tomato, seeded, and juicy flesh removed(you can add that part to the meat mixture developing flavors in the fridge waste not want not hehe)
dry off with paper towel and chop fine
1 jalapeno seeded, chopped fine
1 garlic clove, smashed then chopped fine
some cilantro chopped fine
squeeze of lime juice
little bit of green pepper chopped fine
onion chopped fine.

I dry off everything before putting in a bowl then squeeze some lime juice over it, putting it in the fridge under a towel to keep it dry. Don't use a chopper on this one, you want it small, not pulverized.


I serve that on top with some cheese and sour cream and a side of mexican fried cheese.....and a black plum and mango sliced paper thin for dessert or none....depends on what fruit I have. Had this yesterday was yummy yummy.

Thank you both so much! This really helps me out, tremendesly!! (sp?) I appreciate your ideas they sound so good! I can tell that I was on the right track afterall!!!

Your most welcome Becca! A taco salad is great on this woe. I make mine spicy. It makes me feel like I'm cheating it's so good! Oh I forgot to add, I use salsa and ranch dressing too. It tastes great. I may make one tomorrow!
