weekend menu thread
there wasn't one started, so here goes
Saturday: B: skim milk L: grilled buffalo chicken tenders, 1/2 avocado with lime D: shrimp cocktail * grilled yellow squash S: skim milk *recipe from food network's show weighing in. It's looks really good and light. I'm going to leave the egg out, that part doesn't sound good to me but I'm not a big fan of eggs either Shrimp Cocktail Recipe courtesy Juan-Carlos Cruz Ingredients 6 plum tomatoes, diced 1 green bell pepper, diced 8 green onions, sliced 1 cup peeled and diced cucumber 2 hard-boiled eggs, whites only, chopped 1 clove garlic, crushed 2 tablespoons extra-virgin olive oil 2 tablespoons red wine vinegar 2 tablespoons fresh cilantro leaves, chopped 2 tablespoons fresh parsley leaves, chopped 1 teaspoon salt 3/4-pound ready-to-eat shrimp, chopped 1 head butter lettuce, leaves separated and cleaned Instructions Combine tomatoes, bell pepper, green onions, cucumber, and hard-boiled egg whites in a large bowl; set aside. In a separate bowl, whisk together garlic, olive oil, vinegar, cilantro, parsley, and salt. Add garlic mixture to tomato mixture. Add shrimp and toss to combine. Serve over butter lettuce leaves |

The shrimp dish turned out to be really good! I know I will be making this a lot during the summer. It's so light and refreshing
I always keep frozen salad shrimp on hand, so it would quick to fix anytime because you could easily cut back on the ingrediants for just one person. that's what I did last night.I made a couple of changes other than just reducing some of the ingrediants: red bell pepper instead of green I added 1/2 an avocado left from lunch, juice of 1/2 lime, 1 diced jalapeno because I love spicey. I also cut the oil back to 1 TB and didn't miss it and I did leave the egg out. B: skim milk L: leftover shrimp stuff D: black bean soup, mexican salad (lettuce, cheese, jalapeno, salsa and a little ranch) S: skim milk |

bf-whey protein shake and 6 oz strawberries lunch-3 oz grilled chicken and 2 cups steamed zucchini snack-medium celery stalk w/ wedge of Laughing Cow light and 1 apricot dinner-grilled chicken salad and 3 oz raspberries snack-apricot, Hoods yogurt and .5 oz cashews Sunday bf-whey protein shake w/ 6 oz cantaloupe lunch-ostrich burger with .75 oz lt jalapeno cheddar, 2 cups steamed broccoli snack-medium stalk of celery w/ 2T light cream cheese, apricot dinner-grilled chicken salad and an apricot snack-Hoods yogurt and flax bread |

I had the best menu today, it came together slowly but worked out real good.
B, boiled egg, v8 L, 2 oz turkey breast, salad, oz light cheese, slice cantaloupe S, oz macadamia nuts D, 3 oz chicken breast w hot sauce, 1/2 c pinto beans, steamed spinach and mushrooms over a wedge of light laughing cow cheese (my version of easy-awesome creamed spinach) and oven roasted yellow squash and onion. It is a higher carb day. The fresh veggies are being harvested and yum! My neighbor and I buy from a farmer in the country, tomatoes, cucumbers, squash, onions, eggplant, sweet potatoes. L - 2 rye crisps w/lf cream cheese, mustard & deli sliced chicken S - yogurt D - chicken & green chile w/mashed calui S - sm. bowl SF ice cream I did good today, I'm feeling good about my choices. DBF is baking toll house cookies right now which smell really good, but for the moment, I'd rather feel good about myself than eat one...I did way too well today to ruin it all with a silly cookie! |
