Wednesday Check In - May 25th
Good evening/morning beachers!
I'm getting this up early, feel like an early bedtime tonight, lots going on. It was a great day, tons of running around to boot. Man-o-man, the check in was busy today, Anyone passing through tonight, get an early post in and give it a bump up if need be, the morning beach combers will love someone to respond to besides me. ![]() Hi Liz if you're working, karla, missing you girl and hi to all who follow. Hello!
Just love this site! Started SB because my doctor couldn't find any reason for my ever increasing weight other than my poor diet! Maybe too may pepsi's and burgers. Just started phase 2, I hope I keep losing the weight.
I have a family with 2 teenagers and I am finding it hard to find quick dinners or some that I could make ahead of time. Plus I hate fish and seafood! Any suggestions? ![]() |

Good morning ladies!
Even though the scale isn't being kind to me this morning I'm in a good mood. Of course the scale would be kinder if I hadn't have had ice cream sundaes 3 evenings over the past 4 days. Sigh. Yes, they were made with no sugar added ice cream and no sugar added fudge but if I'm going to get to goal, I've got to recommit and get serious! Today's fashion report finds me in a pair of black slacks (size medium - gotta love that) and a long sleeve red shirt in a size medium. What's funny about the shirt is that since I've been really concentrating on my arms with my strength work outs, this top is really getting loose in my arms! Kewl! I hope my arms aren't too flabby looking in my gown on Friday night. I'm so excited as the formal gets closer and closer. Update on my son yesterday for anyone that's interested. I was able to get his 2 day suspension revoked so he's happily sitting in class today waiting to share the ice cream cake (chocolate cake/vanilla ice cream with a fudge and whipped cream frosting - so see why I just had to have my own sundae from the ice cream shop last night? ) we bought with his classmates.For the first time since we started our new board, I can't think of anything to ramble about on a post today. Hmmmm. I'll have to give it some thought but for those that like to be tortured by my musings, look for a post later on today. TTFN Marva - thanks as always for getting us started. I have to go back to yesterday's posts to see what I missed last night. I'm so happy that our own little corner of the lc world has taken off as well as it has! Talk to you later! Penny - welcome to the Beach! Phase 2 is cool! I have a teenager at home and it was challenging at first to try to cook separate meals. My solution, he eats what we eat most of the time or fends for himself. I keep steakums, hot links, frozen pizzas and the like for him so that when he doesn't like what we are having, he can make something quick for himself. When I want to make something that will last, I make a pot of spaghetti with whole wheat thin spaghetti noodles or a big pot of beef strognoff served with long grain converted rice. My family also enjoys the Awesome Crustless Pizza found on the recipe board. I hardly make fish but we love shrimp and I usually make homemade shrimp fried rice (I can get you the recipe if you like) or shrimp alfredo over whole wheat linguine. Another staple at my house is chicken breast with rice and broccoli with cheese made in the microwave. We even have been known to have breakfast for dinner. I found some 7 grain belgin waffles that are very good and we'll have that with bacon and scrambled eggs. It's quick and delicious! I'm sure others will give you even more suggestions. I've been doing SBD for a year and a half as of next week and my son has never starved and hubby and I love eating this way! Any other questions, just fire away! We would love to help you out! Good morning everyone!!!!
Today I am back to siggy weight of 141. I just know by the end of the week I will be in the 130's. I can just feel it. DD's kindergarten play was so cute. The place was packed with standing room only for some. DD didnt freeze up like I thought she would. She sang loud and clear and looked so pretty. I bought her some clearance crafty things at Target today for reward (instead of the food thing). Daily weather report here for East Coast---rain, rain and lots more rain. The sun doesnt like us here for some reason. This is getting ridiculous. Just boring/drab/yucky days.. Marva---your trip sounds like so much fun. Have a great time visiting and being adventurous!!! COngrats on planning your meals and snacks to stay with the program. Lisa---I love the clothing report. I actually wore a pair of black capris that I bought for goal pants in a size 6, last night to DD's play. DH said I cant wear them anymore or else I will end up pregnant again. He likey... Loosin---heres hoping you get the job.. Good luck!!! Penny---If you stay on track you will keep losing the weight. It works... I dont like fish much but have found I am eating more and more salmon. Not sure why but it is so good for you. I love seafood so I am no help there. Lisa I would love that recipe to try this weekend for the shrimp fried rice. Gotta run and will check in later.

Here is the shrimp fried rice recipe for those that asked, please keep in mind that I'm going from memory!
1 pound of shrimp, tails off 3 green onions chopped fine 2 eggs soy sauce (to taste) 1 cup of long grain converted rice, cooked 1/4 stick of I can't believe it's not butter dash of garlic powder 1 tablespoon of canola oil First I prepare the rice first because it takes 25 minutes. In the meantime I sautee the shrimp in the I can't believe it's not butter and garlic powerd and then set aside. Take a wok or non-stick frying pan and add oil. Once the oil is heated then add green onion and stir for about 30 seconds. Wisk the eggs with 1 tablespoon of water in a small bowl and then add to green onion and oil mixture. Stir the mixture, separating egg until firm but not overly cooked. Then add the rice and soy sauce mixing well until all the rice is coated. Finally, add the shrimp and mix well. I usually serve me and DH 3/4 to 1 cup and let DS have the rest but I think this is enough for about 4 people. I hope this recipe makes sense! Ask away if something I posted seems odd or off, like I said, I went from memory. My teen son loves when I make this and I didn't have time one day last week and he was quite disappointed to have to "settle" for shrimp alfredo instead! ![]() Tricia - I think clean eating is a good thing to report! Keep up the great work! I posted the shrimp fried rice dish above. I hope you enjoy it. Pom - congrats at being back at siggie weight! I know you'll see the 130's this week too!! Please post when you do so we can celebrate with you! I can imagine you were one hot momma in those six 6 capris! You go girlie!! I could only dream of wearing a size 6. Lisa..Thanks for the Fried Rice recipe. One of my favorites!! Is converted rice South Beach friendly? I thought we had to use brown rice.

Okay, so I guess I"m the new kid on the block. Just started SB yesterday after fighting for the last while with Atkins. A little history; I had great success with Atkins six years ago, after the birth of my younger dd, and was even able to keep the weight off for two years. A move across the country and some serious depression had me back up to 170 at the beginning of 2004. I was able to get down to 155 pretty easily and here I sit, bouncing between 151 and 156 for the last year or so. I guess I"m hoping that less fat and more fiber will get things moving again. Haven't been to LCF in quite a while, so I'm glad to find such a friendly crew here on this board.

Barb Glad to have you on the beach. IT really does work. Remember those beautiful soft pants you sent me, what, 2-3 months ago? Guess what they are too big now. I went from the 12's to now 6's and 8's. I too had great success with Atkins in the beginning but over 2 years could just never get back on plan. SB is easy, I love the fruit/whole grain varieties and actually have never eaten more veggies in my life. Lisa---what is long grain converted rice? Do you think we could use brown rice? |

I know brown rice is best but I like the long grain converted kind. It is slow cooking and because of it being parboiled it retains the fiber unlike instant rice. I would use whichever you have on hand or are comfortable with. I have been eating the long grain converted rice since I started Phase 2 and haven't had a problem but as with everything else YMMV. Enjoy!

No way, Pom! That is soooo cool! I'm still stuck where I was. A lot of my weight is muscle in my legs so I look like a lot of women do ten pounds lighter. I look great everywhere except legs and hips. From the side, I look really good, but from behind?

I have a recipe that is really good. CAULI-FLIED RICE. 2lb. of trimmed cauliflower 4 tb vegetable oil 4 cloves of garlic, minced 3-4 cups diced meat,cooked 3 eggs 1 tsp. salt 2 green onions, thinly sliced 1/2 tsp. fresh ground black pepper. Grate the cauliflower using the medium sized holes of a grater, grate the core too. With hands squeeze out as much water as you can. This may not be necessary for some ,cauilflower as they may very in wetness. Over high heat, heat the oil (bacon fat can be used here too) in a wok or large heavy frying pan add the garlic, stiry-fry until pale gold. Add the meat and fry until lightly browned. Break in the egg and fry until softly scrambled. Add the grated cauliflower, sprinkle with salt and stir and fry until it's tender-crisp, about 5-8 min. the lenght of time will depend on the cauliflower. Serves 4 as a main course, 8 as a side dish.
