Tuna Salad

This has been my "staple" recipe for tuna salad for many years. I finally wrote it down in May 2012, carefully measuring every ingredient and then calculating the carbs in each ingredient and each serving.

3 Large Eggs, hard-boiled and chopped in small pieces - then add salt & pepper to eggs
1 Can [4.5 oz] StarKist Chunk Tuna in olive oil [or water], drained
1/4 Cup Vidalia onion, diced
3 Tbls real Mayo
1 tsp Celery Seed
2 Tablespoons Sweet Relish

Mix well - do not use too much mayo.

Yield: 2 cups = 17.3 Carbs

1 cup = 8.65
1/2 cup = 4.325
1/4 cup = 2.1625

Carb Counts:

3 Eggs = 3
Tuna = 0
Vidalia Onion = 3.5
Real Mayo = 0 [Any brand of real mayo is 0 carbs]
Celery Seed = 0.8 per teaspoon
Sweet Relish = 10

Total Carbs = 17.3
Omit relish and total carbs = 7.3

Optional: Serve with Keebler Town House Flatbread Crisps - Sea Salt & Olive Oil. There are 10 net carbs for 8 crackers.

Doug, have you tried sugar free sweet pickle relish? it tends to be VERY SWEET so use it sparingly at first. Personally, I like the one Netrition sells a lot (Mt Olive) but not the Vlasik one that is available locally.

Me, too. I was raised on dill. I do sometimes add a little stevia or ez-sweetz to mine for a change, but I can count on one hand the number of times I've used sweet relish in my entire life

my tuna salad is similar but instead of relish, I just mince pickles up very fine. Either dill or a couple of regular sweet ones. I put in less onion too- I figure the carbs in the sweet pickle are about the same as the onion.

i am so picky with tuna i do not like strong tasting or smelling
i tried yellow fin tuna in water and gagged on it really strong taste
guess i will stick with my star kist in oil

I don't like FISHY tuna - I buy white albacore. Can't stand pickles in my tuna for some reason. I eat them on the side though.....weird huh ??

we buy fresh ahi tuna.......smash it, add hard boiled eggs, a teeny bit of celery and some avocado, salt and pepper.

I use Costco's canned white albacore - drain (cats are very happy when it's tuna day!), add a blop of homemade mayo, some minced sweet onion, and some of our homemade bread & butter jalapeno pickles, minced up. That's it!

I used to always have it with mashed hard boiled eggs, sweet pickle relish, mustard and mayo but found out I like it best just tuna and mayo and a dill pickle on the side!
