DIY Alternatives
I'm wondering does anyone make low carb meat alternatives. The ones in the store are just too high in sodium. I would like to try sausages, burger and ground. Has anyone done this? Also does anyone know of a Non-GMO textured protein brands?

I have made some in the past, but not lately.
None of the ones I made were noteworthy. 365 brand (whole foods) is non GMO and I eat their faux hot dogs. There might be a list of vegetarian non GMO meat replacements if you do a search. ...ok just checked....type in non gmo vegetarian meat replacements and a site will come up with a good list of them. We aren't allowed to post links here. I noticed it said Neat Meat (new product) and SOL...I tried the SOL burger and it's delicious. Also sunshine burger...they are okay. Thanks Nigel. I think I found a recipe for fake Italian Sausage. I am going to try it an report back.
Thanks for those. It's always good to hear real opinions. Most of the ones I've seen were either from someone who eats meat and wants a change or a site trying to sell something |

Yes, please let me know how the sausage turns out.
I have a pile of recipes for sausage, but very little time for experimenting. I did try one recipe made with mostly oatmeal, but the end result was very cardboard-ish. |

Okay I tried it at twice and it didn't work. The recipe calls for corn flour and I didn't want a huge bag of that so I brought a Martha White Cornbread mix and used that as the binding agent. It came out good. I am going to try to tweak it a little more. I like the flavor of spicy Italian sausages so I'm going to try to get more savory in it.

The cornbread mix might have white flour in it also...that might make a difference in the end result. A lot of them also contain sugar. Was the taste okay?
I don't know the difference in corn flour and corn meal, but they sell small bags of cornmeal at the walmart here. I read that corn flour is a finer grind, but that's all I figured out. Last edited by Nigel; 08-20-2014 at 09:32 AM.. |

It tasted fine to me but my mom hated them. She said it was too bready. I think I'm going to try vital wheat gluten next. I think that will give more of a chewy flavor.
Oh and yes it had sugar in it so it won't be coming back. I did see cornmeal but I thought they would make it a little too gritty. That's all they had here at Walmart. The stores here are lacking a lot of things I use to get in MS. It's weird. |

Yeah, I live in a tiny town and a town of about 25,000 is 15 miles away and then San Antonio is 85+ miles away, depending on which part I go to. I shop there about once a month because I can't find a lot of things here. We only have a super walmart and an HEB grocery store and a couple of dollar stores, so not a lot of choices. Lots of times, I order online, if the shipping rate is decent.
