Moderate Carb Apple Dump Cake

I was given a bag of apples so I taught my kids how to make a dump cake. This is low carb with the exception of the apples. It'd make a great Thanksgiving indulgence.



Moderate Carb Apple Dump Cake

Peel and thinly slice apples (about 7 medium) to fill 2/3 of a 9x13 inch pan.

Mix the following ingredients together in a small bowl, pour over apple slices and stir to combine:
5 T Vanilla SF DaVinci syrup
1 T apple pie spice
25 drops EZ-Sweetz
15 drops Vanilla stevia
1 t molasses
1/8 t salt
1/4 t guar gum (or xanthan gum or 2 T cornstarch)

Mix the following together in a bowl and sprinkle over evenly spread apples (do not stir):
3/4 cup chopped pecans
1 cup almond flour
1/4 cup lupin flour (or any nut flour or baking mix)
1/2 t baking powder
1/2 cup Confectioner's Swerve
1/8 t salt

Mix the following together in a small bowl and drizzle evenly over the nut mixture (do not stir):
1 stick melted butter
1 t Buttery Sweet dough emulsion (or vanilla)

Bake 40 minutes at 350 until golden.

I had thought of the chayote... zucchini would probably work too.

This is definitely a pie thing.. not a cake.

It seems more like a cobbler than a cake or pie, but looks delicious! I would like to try it with a combo of apples and zucchini.

Thanks Jen...this looks delicious. I ordered some Dixie yellow snackin' cake to try a pumpkin dump cake, but this would be a lot cheaper!
Do you have the calories and carb count for it already figured out?

I took the liberty to figure out the nutritional facts on this, using 12 servings for the whole recipe. I used 1/4 cup more Almond flour in place of the lupin flour for those of us that don't have this product.

Here is the carb count on this per serving:
Carbs 15.3g
Fiber 3.9g
NET CARBS: 11.4g

It's the apples that are making this so HC. Less apples, or part apples and part something else will work well. I would do the chayote, using one whole one, since it mimics apples so well and has such a mild flavor and tends to pick up the taste of whatever spice you put with it and then 3.5 apples instead of the 7 to count those carbs!

This will also change the carb count per serving to this:

Carbs 10.13g
Fiber 3.3g
NET CARBS: 6.83g

Not a bad carb count with the chayote at all!

BTW: Calories with the chayote are 142 and with just apples are 160

I've made mock apple crisp with zucchini and also with chayote and both were great. I'd try one or the other - or heck - both! It's a shame to have to eat those experiments....
