Crock pot recipes for cheaper cuts of beef

I am new here and looking for crock pot recipes for cheaper cuts of beef. The cheaper cuts have more fat, which is recommended, but they are also tougher. I am not sure if sour cream, cream or cream cheese can safely go in the crock pot without burning.

I don't really use recipes, but I throw the cheap tough cuts of beef into the crockpot with savories (onions, bell peppers, garlic) on the bottom, seasoning, and about half a cup of liquid (usually homemade beef broth that I throw in frozen). Sometimes I add veggies (green beans, cabbage, or cauliflower) halfway through. Cook on high for 6 or so hours, or low for 8-10.

Mostly, I sear the meat in bacon fat or coconut oil first, but sometimes I don't have the patience, so I throw it in frozen.

This weekend, I made pot roast using a chuck roast, a few cloves of garlic, two medium onions, one each of a red and orange bell pepper, one jalapeño, some frozen homemade beef broth, salt, pepper, cumin, cayenne pepper, a splash of the hot pickle juice, and about a TBS of raspberry sugar free syrup.

I don't tend to use creamy elements in my beef crockpot recipes, so I can't address that part of your question.

Add the cream, cheese or sour cream just at the end to melt or it will probably curdle or separate.

That is what I did. I cooked it with beef broth and onion soup mix and added cream cheese and cream afterwards with some sour cream thrown in as well heated it up. I had it with green beans. It is so good.
