Any recipes for Bob's Red Mill low carb baking mix ?

Just got in some Bob's Red Mill low carb baking mix. Any good recipes for rolls or muffins ? Would like to make some rolls for Easter supper. Any other recipes for the mix either sweet or savory ? I would appreciate any and all ideas TIA

If anyone's interested here is the recipe I found. Next time I will add more sweetener but they were super yummy & definitely had a bread/muffin quality. I made half with frozen blueberries and the other half with shredded mozzarella cheese.

In order to get 12 muffins I added another cup of the baking mix, another egg and I also added 1 cup of GY.

2 cups Low-Carb Baking Mix
3 tsp Baking Powder
4 packets of your favorite Low Carb Sweetener
2 Eggs
1 to 1-1/4 cups Water
2 Tbsp Canola Oil
1/2 tsp Vanilla
Directions

Step 1

Heat oven to 350°F. Lightly coat muffin tins with spray oil.
Step 2

In a mixing bowl, combine dry ingredients (Low Carb Baking Mix, baking powder and sweetener). Make a well in the center of dry ingredients and add the eggs, water, oil and vanilla. Mix with a fork or whisk until just blended. Take care not to overmix.
Step 3

Divide batter into 8 muffin tins. Bake 22-25 minutes. Serve warm with your favorite butter or cheese.

Makes 8 muffins.

how does this taste in comparison to carbquik?

i recently have been trying carbquik and it has a weird taste. i sift out the mystery flakes and it helps but it just isn't what i need. also i used it in some brownies that went straight in the trash before i could even turn the oven off. pancakes are okay yet strangely far from filling. the sodium is rather high and considering i sift out what i think is fat that increases the carb therefore carb/sodium makes bob's lc mix is worth a shot. hopefully there isn't a weird taste.

I've never had Carbquick, but I liked the Bob's mix. It gave things a whole grain or wheat berry kind of flavor, but not whole-wheat-y, if that makes any sense.

The Bob's LC Baking Mix was an impulse purchase for me a couple weeks ago, but I haven't used it yet. Thanks for the reminder and the recipe.

Bumping this up cuz I just got some of this to try.

There is a muffin recipe on the bag and a pancake recipe.

Does anyone have any other recipes using this mix?

Do you think I could use it in place of the better than flour mix?

Any help here greatly appreciated.

The "mystery flakes" are the fat.

I hope you get some replies. I still haven't used mine. Mostly because I've been watching my calories over the last year, so have really cut down on baking.

Maybe I'll try the pancake recipe on the package this weekend as a treat.

You should be able to sub it for other LC flour blends. I have a number of recipes that call for carbalose, and have made them with other flour blends. They don't come out EXACTLY like the carbalose recipe, but have been perfectly acceptable.

Pandora - what is GY? And I just want to clarify...you used 3 cups baking mix and 3 eggs or is the 2 cups and 2 eggs after you added the extras?

Thank you. I was hoping I could use it as a sub. I'll post after I get around to making something. I've been busy most weekends, but I'll see if I can fit in a little baking.

I use Bob's low carb bread flour, and I've found it to be interchangeable with most other flours, although it will give you a nutty/wholesome flavor. I've never used the low carb bake mix.

I made the rolls from the recipe right on the bag, and they were fabulous. Same with the pizza crust.
