DD Tuesday menus!



B: hard boiled egg w/1tsp home made safflower mayo (if needed)
L: salad: spinach and romaine topped w/sliced hard boiled egg and veggies I pickled*, some of the pickling liquid mixed w/1tsp home made safflower mayo
S: stir fry: chuck steak, broccoli, onion, tamari, ginger, garlic

If I have the breakfast, I'll be slightly over cals (586), if I don't then I'll be around 483.

*I used a mandolin and sliced a peeled cucumber, several radishes and a small white onion.
Mixed 1 part Braggs vinegar and 1 part water, then added 1tsp sea salt, 5 drops stevia and a big pinch of garlic powder.
Pour over the veggies to submerge, then refrigerate.
Makes quite a bit, so I can use this over several salads and the pickling liquid is a good dressing that's basically zero calories, too.

Changed plans a bit.
I skipped breakfast but was a little hungry at lunch, so I had leftover steak with the salad.
I'll just adjust and have a veggie stir fry instead for supper.
I also had about an ounce of mixed nuts, so it's about the same total for the day.

Breakfast: Coffee with almond milk
Lunch: Half a turkey sandwich
Dinner: Beef fajitas strips sauteed with cabbage and onion.
Dessert: Vanilla Yopa

Total for day was about 525

It actually was a good day and can't wait to see if I had a drop tomorrow!
