Made Zucchini Lasagna!!

Unbelievably delicious! Just substituted long slices of zucchini for the lasagna noodles....used ricotta and mozzarella (as i usually do) and my meat sauce...and voila! delicious dinner! Never missed the noodles!!
(I prepared the zucchini as follows: place zucchini slices on paper towel and sprinkle with salt. Let sit for 10 minutes. Then, pat dry and place on grill pan wiped with olive oil for just a few minutes. This process will help to get all water out of zucchini. It worked like a charm!)

MMmm ... sounds good - I've had Eggplant lasagna before but I tend to have more zucchini on hand. Guess I'll have to try it

Is the texture anything like pasta? I have such a hard time believing it will be remotely like it. But then again I've never tried it.
