Favorite crock-pot recipes? (Low Carb)

I was wondering if anyone has a favorite recipe? I was thinking about doing

4 chicken breasts
1 can salsa verde (Herdez)
green chiles
cilantro

and letting it all cook for a couple hours. Favorites anyone?? Hope you all are having a great Sunday!

I do the exact same recipe except with pork. In the old days I would add potatoes about half way through.

A good number of low carb crock-pot meals seem to be 3 ingredient meals...
1) a main meat
2) your choice of salsa and/or broth
And
3) your choice of veggies.

My 3 ingredient crock-pot recipe of choice these days is meatball stew; the main meat being meatballs.

I like chicken thighs cooked in chicken broth, with a bit of salt, garlic and good pinch of cayenne added. I'll often add what veggies I have to use, but green beans, leftover leafy greens, celery, kale, are good to add. If a big crockpot, I add a can of coconut milk towards the end of cooking. You could add a bit of sour cream at the end instead of coconut milk.

Potatoes are generally too carby for most low-carb eaters.

I do one similar to what you're planning, but I also like to throw in a cup or more of Tostitos Salsa con Queso. Makes a really nice creamy sauce with the salsa and peppers. Some chopped onion is good too, or some sliced green onion as a garnish if you want to keep the carbs down even further.

Have chicken in the crockpot right now !

Chicken breasts
pkg taco seasoning
can of green chilies
can of diced tomatoes
can of jalapeno slices

Shred and eat with sour cream (or in tacos or enchiladas )

It's yummy stuff

Buffalo chicken Dip (It's NOT just for SuperBowl parties)

There are many recipes for this online. This is the one that I follow and use:

2 (10 ounce) cans chicken
2 (8 ounce) packets cream cheese
3/4 cup hot sauce (I use Frank's)
1 cup ranch dressing
2 cups mild cheddar cheese

NOTE: Depending on how I feel I will leave out or include the ranch dressing; 9x out of 10 I leave it out!
