Coconut sugar and Me - YMMV

I've seen a few recipes that call for this and was curious about it. Then I read some articles that said it would spike me so I decided to leave it alone.

However, I have seen a few posts where other diabetics have used it and it did not spike them so I thought I would get a sample and try it. My grocery store had a one pound bag of the organic for $5 (that is cheaper than Truvia) so I bought it.

I made my morning coffee and added 4 teaspoons. It was not sweet enough for me. Feeling daring, I added 4 more. Then gave up and added my staple of Stevita. Now it was too sweet. I drank it anyways.

Before drinking, bg was 149.
After 1 hour, 141.
After 2 hours, 141.

I am really happy. I think this product works a lot better in baked goods and I wanted an inexpensive way to kick Truvia out of my life. I am going to make some avocado brownies later and see how it does in baked goods and test just to make sure. You know how onions can carmelize after you cook them and raise your bg #s ? I just want to make sure.

WOE: JUDDD/PHD, LC now that my BG is getting weird

Personally, just looking at an onion raises my BG. This has seriously impacted my cooking style.

Hmmmmm. I have an unopened bag of coconut sugar in my pantry. I think I will do a little experimenting.

That is the only way to KNOW. Test, have a little and test again. I have not heard any other diabetics say it spiked them but I did read an article that said all kinds of bad things about it. I'm the type of person that will need proof.

I've never tried it, but I've heard of other people who have used it in small amounts and not had a spike. If I recall correctly, though, it is supposed to taste something like molasses, so I'm not sure I want it in my coffee! Perhaps in a cookie or muffin along with the coffee.

The texture and flavor is definitely more like a brown sugar or molasses. I use it in baking and it works out fine. I still use Stevita for my coffee.
