For my JB's living la vida low carb

For all my LCF's living la vida Low Carb...I made a surprising discovery today I just had to share. I made a stir fry for supper with the veggie a little larger than I usually cut 'em and at the last minute realized I had a bag of broccoli slaw that I had to use. Thinking it would cook quicker than the rest of the veggies, which was not to be. They were actually a bit on the al dente side and passed as noodles for my lc ramen quite well...very delicious and I'll definitely remember to do that again.

Hope you don't mind, but I'm posting this in a few of the threads, so if you run across it again, please ignore.

Great idea.

Some people use those skinny enoki mushrooms as noodles in an Asian stir-fry.

I'm always glad to see that other people are doing low carb along with JUDDD. Going back to eating junk seems like a step backward to me.

Don't really care for enokis which is a surprise as I like most mushrooms...have a couple of portabellas in the fridge I must cook tomorrow.

My favorite pasta sub is the zucchini zoodles, but they can get too soft awfully quickly, I also just use the stripper on my tater peeler to make angel hair type non-pasta, and just cut fettuccine size with a knife.

Spaghetti squash is just too sweet as a pasta sub for me.

Any other suggestions for non-pasta...need a good one for marinara, or sausage and peppers...Dreamfields has been my go-to when I just have to have it but it's still too "carby"

forgot to mention the shirataki "yam noodles." They're okay but can't eat that much of them for some reason....guess I'll continue eating my bowl of sausage and pepper or meatballs and meatballs.

People on the recipe board are reporting great success with a Pasta Dough that looks amazingly like genuine wheat pasta from the photographs and has rave reviews. I don't have the gadget they mention because it is punitively expensive in the UK but other people report using hand methods and it still seems to work.

Did anyone ever find out if those black bean noodles were truly low-carb? It seems improbable, but the label claims 5gm net carbs. at any rate, they definitely aren't "WHITE" ! ;~)

I have used broccoli slaw as "noodles" on my DDs with a cream cheese wedge and chicken--sometimes mushrooms and onions too. It's delicious.

Thank you so much Slowsure...I've made egg noodles my mom's old-fashioned way since I was a kid and this is the first time I've seen something that may resemble those. I even made them when I was in Japan, and they were amazed that a Gaijin knew how to make noodles.
