Spiced Lamb Meatballs
Here is an old recipe of mine that I've revamped to low carb. They are good for appetizers or a main dish. You can leave off the tomato topping if you'd like. I'm serving these tonight with steamed artichokes & garlic mayo, and a green salad.
Spiced Lamb Meatballs
1/2 oz. pork rinds
2 cloves garlic, peeled
1/2 medium onion
1/4 cup cilantro leaves or parsley
1 large egg
1 tsp. ground cumin
1 tsp. paprika
1 tsp. sea salt
1/2 teaspoon Aleppo pepper (or 1/4 tsp. cayenne)
1/8 tsp. ground allspice
1/8 tsp. ground cinnamon
1 pound ground lamb
1/2 pound ground pork
1/2 cup lower-sugar ketchup
1/2 tsp. ground cumin
Dash Worcestershire sauce
Dash Tabasco sauce
Preheat oven to 425║F.
Place pork rinds in food processor bowl and process until ground. Add garlic, onion and cilantro and pulse until minced. Add remaining meatball ingredients and pulse until well mixed. Form mixture into 1-inch balls (a cookie scoop works well; use wet hands to form meatballs) and place on a foil lined baking sheet.
For topping: mix ingredients together in a small bowl. Top each meatball with a dab of the topping (about 1/2 tsp. each).
Bake meatballs for 20-25 minutes, until browned.

Oooo, that made my mouth water! I have some ground lamb in the freezer too. I'll have to drag some out soon and try this! Thanks!
