Bacon Cheese Fries using Jicama

I'm considering making this dish using Jicama instead of potatoes. Could someone describe to me the taste and texture when it's cooked? This is what I want to make:

when cleochatra had her blog, I remember a memorable concept... someone can probably quote what she actually said, but it was something to do with NO MATTER WHAT YOU DO TO JICAMA IT WILL STAY CRISP. enuf said. you will have crispy warm jicama sricks with whatever else is in there. NOTHING like fries. this is why people use turnips? anyway, something else.

4 net grams in 1/4 cup. I am not sure you could get enough to really make a nice place of cheese fries without really adding up grams.

I was JUST coming here to say what you just said!

My good friend Becky once told me jicama would outlive a nuclear blast and still be crunchy.

Try daikon radish instead for fries (a little gamier than a potato, but uprisingly delightful). Or, better yet, use cauliflower crust bread sticks as the base. The thinner strips behave a lot like french fries, and mixed with chives, sour cream and bacon, it's pretty drooltacular.

I really like Jicama fries! (Don't like making them, but like eating them. )
Yes, they stay very crunchy, and they are slightly sweet, but I like them! But that's me.

I use pork rinds. Place on paper plate. Sprinkle with cooked bacon pieces, sliced green onions, sliced black olives, grated cheese. Microwave to melt cheese. Dollop with sour cream. NACHOS. Satisfies that craving for fries.
