Venison meat sticks....

My Dad made me venison meat sticks and I feel like they are pretty carb safe but I wanted to check here. He kills the deer himself, grinds the meat and organs and adds pepper flakes and spices, no sugar. They are then packed in collagen casings.

They are....amazing......

Do you guys think I'm okay? I estimated them to be less than 1 carb per stick.

also what your Dad makes is 'almost a lost art'. How to process a hunt into good satisfying foods is a great skill to have! Your Dad rocks! I love hearing about others that hunt and use the meat to the best advantages they can. GOOD food!!

If the sticks are smoked they will usually have a cure in them for safety, hence nitrates, and usually a binder so they dont crumble, usually soy protein concentrate.
Collagen is made from animal protein.
I don't think they are much of a carb problem.
