Leftover recipes?

Anyone have any favorite turkey leftover recipes?

Nope, I just make sandwiches or turkey tetrazinni or Mexican turkey casserole, if there is enough. There usually isn't enough. Do you guys like turkey pot pie, that's usually a crowd pleaser. Nothing fancy here at the house.

When I saw the thread, I was going to add the tetrazzini which is what I'll be making tomorrow for the sisters...other than that, it's only sandwiches, salads and slices of the turkey out-of-hand while standing in front the fridge looking for something to eat. Tried hash one time and was no impressed..pot pie sounds good.

p.s....Oh! and turkey carcas soup.

If you've got the space in your freezer, you could dice up a bunch of the turkey and place a cup of diced turkey in individual baggies. Then you can use it later on in salads, soups, etc.
