Yummy induction-friendly recipe for bunco tonight?

What would be something delicious that everyone would like, but that I could have too so that everyone won't ask me why I'm not eating?

I am hosting (taking the drinks), so that area is covered and I have some diet beverage choices for myself. But everyone takes either an entree, appetizer, or dessert and we all usually eat our way through the evening.

I have never brought home a leftover jalapeno popper...every single one gets eaten...Halve jalapeno and take out seeds and rind...fill with a lil of this mixture and bake at 350 for 25 to 30 minutes...the less you bake the spicer they are.
Filling is 8 ounces cooked spicy breakfast sausage
8 ounces parmesan cheese from just the kind you shake on
8 ounces cream cheese softened
just fill jalapeno half and bake.

Love that jalapeno popper recipe! You can also make a chicken satay with a spicy peanut sauce as well as herb dip (sour cream, mayo, fresh dill, garlic, chopped green onions, parsley, salt & pepper) with cut up fresh veggies. Think about a nice cheese plate and charcuterie plate too along with spiced nuts. Hope you have FUN!

I make the jalapeno poppers too and they're great! Another one that I make is stuffed mushrooms. Just mix some cream cheese and bacon bits together and stuff mushroom caps with it. Bake at 350, for about 20-25 minutes. You can tell they're done when the mushrooms are getting soft and the juice from the mushrooms is running on the cookie sheet. These are amazing and I never make enough of them!

You can also mix cream cheese, diced green onions, and chopped up dried beef together and stuff celery with it. If you've never used dried beef, I know it sounds a little weird, but it really does taste wonderful when it's all mixed together. I actually keep a bowl of this mix in the refrig and will snack on it without the celery.

I've never made poppers. Can you give me an idea of about how many jalapenos the filling will fill?

This is too late but maybe for next time....Bacon, tomato dip! Veggies like sliced English cucumber, celery, sliced jicama or sliced kohlrabi are great. Pork rinds are perfect.


BACON DIP

1 part sour cream
1 part mayonnaise
Crumbled, cooked bacon to taste (I added probably two loose handfuls)
2-3 small chopped tomatoes, or a handful of quartered cherry tomatoes (once again, this is to taste)
Bunch of green onions, chopped (I used both the green parts and the whiter "stem" parts...but I like it that way)
Spices (I added lots of freshly ground cracked black pepper, some dried chives, a l+ittle garlic powder...really, you could add anything!)

Buffalo chicken dip...YUMMMY!

Shredded chicken, cream cheese, hot sauce, cheddar cheese, a little onion...did I forget anything?? Mix and bake and serve w LC crackers or veggies...OMG YUM

I made a buffalo chicken dip a while back that was delish, served it with celery and chips for the carb eaters!

Stuffed jalapenos are always a hit!

For my poppers, I use a mix of cream cheese, shredded cheddar cheese, minced habanero (optional, of course--they add heat and sweet), paprika, liquid smoke, garlic, and whatever other seasoning sounds good at the time. Then I stuff and wrap the jalapeño halves in half a slice of bacon before baking.

They're delicious, and everyone loves them.
