** YUMMY LOW CARB SNACKS **

I had to go to a PTA event where they were serving food. We also had the option to bring some snacks. I thought this was a great idea, since they usually have pizza and cookies there!!!
So I decided to make things that I make for my young kids which are healthy and low carb.

Mozarella Caprese...each large mozarella ball is about 6g carbs, which gives about 4 slices. So you can eat 4 of these with the peppers or tomatoes for a total of 10g carbs

Chocolate Raspberry Mousse...made with pureed avocado, unsweetened cocoa powder and stevia...topped off with raspberries...5g carbs per cup.

I like almond milk egg nog for a treat during the holidays....eggs, almond milk, stevia, vanilla, nutmeg...blend very well and chill. Yum.

Any other treat ideas to share?

I do "regular" egg nog: eggs, CREAM (HWC), vanilla, nutmeg, and a pinch of stevia if you need it. And then I call it "breakfast".

Mmmmm, I'm going to whip up some kind of eggnog right now!

I like to mix 2oz of softened cream cheese with an equal part of canned pumpkin, I just eyeball it, then add cinnamon and sweetener and you have a pumpkin cheesecake pudding.

My Bf took the Egg Nog flavored Torani's Sugar Free Syrup and added it to some almond milk mixed with heavy whipping cream. He swears it tastes just like egg nog!

Raspberry Mousse looks great. Where can i find this recipe? I never ate avocado, is it sweet or sour? Does the unsweetened cocoa powder and stevia mask the taste or the avocado?
