WOE: Healthy Low Carb
Gluten Free Baking Mix from Aldi

we found this last month at Aldi. I have made the biscuits, pancakes and even used it for sausage balls. All were fabulous and passed undetected to the newly learning to be picky triplets.

I am wondering how I could use this mix to make muffins? Does anyone have suggestions? It seems to be kinda like bisquick, but I never made bisquick muffins either.

What mix from Aldi?

Do you have a list of the ingredients? Sometimes gluten free means a lot of
things ie., tapioca flour, sorghum flour etc. Might be gluten free/high carb.

I can almost guarantee its high carb. We keep things like this around our house for my DD. She doesn't do LC, but does eat GF. I always caution her against using these kinds of substitutions very often because they do cause the same exact problems that processed wheat does. It's nice for her to have as a treat now and then though.

Im pretty sure its high carb, but right now we have to limit gluten for L. L is the only one out of the kids that would pretty much be a carbavore. She is not real big on meat, would rather have pasta or rice etc. She has been doing so well with all the food changes we have made, I thought this would be a nice treat for her to have something.

So while I am not planning to eat it, I would like to make her some gluten free muffins and maybe freeze some for ever so often when we need it.
