Most amazing chocolate fudge cheesecake

I found this recipe online, and I must say, it is probably in the top 10 of most delicious things I have ever put into my mouth. It's sweetened with Xylitol...I'm sure you could sub other sweeteners if that doesn't agree with you. This is truly amazing....had to share. Sorry for the measurements in grams....that's how it is on the site..I just used a scale to figure it out.

150g Almond meal
50g or around 1/3 cup Desiccated/finely shredded coconut
60g butter, melted
1/4 cup of Xyltiol or equivalent sweetener
dash of vanilla

Combine base ingredients and press into the base of the dish, place into oven and reduce temperature to 140C/284F and bake for 15 mins or until golden.

Remove and allow to cool.

2 Tablespoons butter
1/2 cup cream
4oz or 125g cream cheese (full fat)
4 Tablespoons Xylitol or equivalent sweetener
2 Tablespoons cocoa powder (you can go up to 3Tablespoons of cocoa to make it more chocolaty)
1/2 teaspoon vanilla

In a small saucepan, over low heat, melt butter. Add cream and cream cheese, and whisk until smooth.

Add Xylitol, and adjust too taste. (Add a little more if you need too). Heat until bubbling, stirring constantly.

Reduce heat, and stir in cocoa (again you can adjust too taste) Leave in saucepan and set aside to cool.

Once both the base and the fudge have cooled add the fudge to the base and spread evenly.

The Topping

1 Cup of cream you could also add flavourings to the cream, like strawberry to make a little different.
1/2 teaspoon of vanilla
1-2 teaspoons of xylitol
2-3 squares of Lindt 70% or even better Lindt 85% chocolate melted

In a bowl add the cream and vanilla and begin whipping, add the xylitol and check for sweetness and adjust (you want the cream to be just slightly sweet to taste). Whip until thick and then spread over the fudge.

Melt the chocolate and drizzle over the cream.

Refrigerate for 1 hour minimum (2 hours preferably), cut into 8 slices and serve.

Umm... I'll take a slice! That looks really good! Now, do I need another recipe? Nope! But I'm going to copy it down anyway!! Thanks for sharing, Cheryl.. (well, sorta sharing, more like teasing!).

I also made this yesterday, but with a modification. I didn't make the crust and I folded the filling into the topping and just put the whole thing in a bowl. I should have sifted the cocoa powder before adding it to the cream cheese mixture as I ended up with teeny tiny lumps of cocoa that I couldn't break up. It still tastes OK, though. I kept thinking "this tastes like an Oreo". But, it's been a couple of years since I've had an Oreo so my memory might be off.

I copied and printed this recipe. I will have to use splenda since amazon doesn't ship food products to Guam. I will probably try truvia in the chocolate since splenda makes chocolate bitter. But I could eat the lindt 85% chocolate plain. yummy dark chocolate.

Amazing chocolate fudge cheesecake

Just made this yesterday for my "Birthday cake". It was awesome. I just need to add a little more sweetener next time. I used liquid stevia and went easy on it because I did not want to ruin it by putting in too much.
