Thai Coconut Soup
You guys have to check out this soup. I am making to eat all week. I think the macros are really good for keto.
What do you think?
2 tablespoons red curry paste
1 12 ounce cans of coconut milk and 1 lite can coconut milk
2 cups chicken stock
2 tablespoons peanut butter (i used Peanut Flour)
1 pounds chicken breasts, cut into 1 1/2 inch pieces (i used ground)
1 red bell pepper, seeded and sliced into 1/4 inch slices
1 onion, thinly sliced
1 heaping tablespoon fresh ginger, minced
1 package frozen spinach
1 tablespoon lime juice
cilantro for garnish
Mix the curry paste, coconut milk, chicken stock, and peanut butter in a 4-1/2 to 6-quart slow-cooker bowl. Place the chicken breast, red bell pepper, onion and ginger in the slow cooker, cover and cook on high for 4 hours.
I put the recipe in my calculator and came up with 5 servings or 6 servings.
For 5 its
9 grams carbs 9%
28 grams fat 66%
23 grams protein 24%
And then could maybe add some coconut oil to bring up the fat if i need to or some avocado.

I do variations of that recipe without the spinach based on ingredients in the house - takes about 10 minutes (my 6 yo daughter loves it)
Don't worry about momentary cheats or stumbles, focus on succeeding in the long run. Always keep your eye on the target and if you stumble, get back up and stay in the race.
What we weigh is the result of a meal, a day, a week, a month, a year of choices...

I take it this is Laksa? Or one of the many variations there of?
Laksa is actually one of my childhood comfort dishes! My family used to go out for Friday night market Laksa. YUM! Coconut based curries and soups are great for low carb diets with a little adaption.
You might want to take a look at the below recipes. There's quite a bit of variation in what you can add. Made from scratch, they're a bit too much fuss for anything but the weekend but there are shortcuts in premade spices.

As you can see, you can add pretty much anything to a laksa or laksa inspired dish. Shiritaki noodles are great in this kind of thing but can be left out easily. Any kind of meat or seafood is great. Leftovers from the Sunday roast are a classic addition to homemade laksa. The broth can also be frozen, which adds to the convenience.
