If you like coconut cream pie...

Try DJFoodie's recipe. The coconut cream pie is the best I have ever eaten, high or low carb. I made the following changes.
1. I put a few drops of sweetener in the crust.
2. I increased the filling sweetener to 1/2 cup's worth.

Next time I might just use 3 cups of whipped cream rather than 4. But I must say, it was a pleasure wading through all 4 cups. We all loved the pie. Everyone wanted the recipe.

It DOES look good! my hubby DOES like coconut cream pie. I'll have to make him one of these. I have a coconut custard pie, but a coconut cream is really his fav. Thanks for mentioning this, Soobee!

Thanks for sharing!! I saw his recipe when he first added it to his blog, but after reading his "sludge" comments I decided to wait before giving it a try. And, then I forgot about it.
