Chicken Caprese

I made the most delicious chicken tonight! I chopped up chicken thighs and pan fried them. I roasted some pear and cherry tomatoes Ina 450 degree oven until they popped and started to brown a little, with a drizzle of evoo. After they were done. I stirred in some minced garlic, salt and pepper. I put the chicken in a 8x8 Pyrex pan, topped with the roasted tomato sauce mixture, then sliced some fresh mozzarella and laid it over the top. Out it in the oven until the cheese melted, and sprinkled some fresh basil over the top. I had mine with broccoli, my fam had theirs over pasta. Easy, and incredibly good!
