Overnight Oats

I tried making overnight oats last night... got the idea from a post on a blog called pbfingers. She used 2/3 cup of oats though and no way can I eat that many carbs. So I reworked the formula, took a stab at it and ended up with a really good breakfast halfway between cold breakfast granola type cereal and hot oatmeal. The line on my jar showed 10 ounces and it is filling! I am guessing there are endless things to add to this from different syrups to cinnamon, to almond extract to nuts, nut butters, cocoa, coconut, protein powder, fruits...



Skinny Overnight Oats

4 oz Fage 0% plain greek yogurt
1 tablespoons chia seeds
1/4 cup old fashioned oats
1/2 cup almond milk
6 drops EZ-Sweetz
2 T Vanilla SF Torani
pinch salt

Stir everything together (watch out for chia seeds stuck to the bottom edges!) in a large bowl or pint mason jar, cover and chill and thicken overnight.

16 net carbs (24 with 8 fiber), 240 calories, 8 g fat, 19 g protein- I go by the low carb experts' belief that a cup of unsweetened greek yogurt has only 6 carbs left by the time it is opened and eaten. Otherwise this recipe has 18 net carbs.

I wonder if adding oat fiber or flax would work and knock down the carb count?

There was a goof in my calorie count... it's actually 225 calories.

I'd try the oat fiber.

Delicious and with Bob's gluten free oats it would just be fabulous.
Let us know if you make any changes.

I tried a version with a bit of oat fiber, flax, cinnamon, peach syrup and only 3 T oats but... not as good. I ate it but I won't make that version again. I don't know if it was the oat fiber or the cinnamon or what but it had a chemical taste. I bet almond extract would rock these oats as the flavor!

Can't wait to hear what you think Ouizoid!

That is interesting! I hope it wasnt the cinnamon because I was thinking that would be a nice addition.

It might've been uncooked flax too? Hmm... never tried a bite of flax by itself. It might also be that I used too much cinnamon. Or too much syrup. Could've been a "too much Splenda" taste.

I'd eliminate variables... I just made too many changes at once. I'd make the recipe as shown and add cinnamon OR change the vanilla syrup to peach first and see.

Me too! I went to make them last night and realized I only had steel cut oats so it was a no go for me. I will pick up some regular oats this weekend!

I read that it can be made with them too... might have to adjust the liquids or time required however...

My husband has eaten 4 of these now- an easy breakfast to take to work and eat while busy at desk.

I should try doing this your original way--I used oat bran, and something about the texture put me off, and I LOVE oat bran!

Like me, I modified it with fewer oats and added flax meal and oat fiber- really did not work.
