Soft Tacos.

Oopsie rolls that are a little flatter and bigger.... soft tortilla. Tacos for dinner and so filling. This is why I can stay on low carb.

Fried grated cheese makes a great taco.

Normally I don't do substitutions for carby items but this idea has me intrigued.

I've never made the Oopsie roll recipe because it would have meant dragging out the standing mixer and swapping bowls (what a pain). But I should be getting a free hand mixer tomorrow (yay!) so I think I want to try it.

My question, rndiane - do you just spread out the mixture more to make them flat? I'm assuming then you'd have to adjust the cooking time too, correct?

We use big romaine lettuce leaves for our soft tacos. Works great!
