I need serious advice on upping my fat - PLEASE...

I don't even know if it's possible. I have kidney disease, and I read that scientists have had success in feeding mice a low carb, high fat diet to treat it. The problem is, how do you eat a lot of fat when you can't have bacon, cheese, cream, butter, avocado, deli meats, and limited protein?! Any suggestions?

I use coconut oil daily in my coffee and it has wonderful nutrition benefits. Also, can you have small portions of fatty cuts of meat like hamburger, chicken thighs with skin, pork chops, lamb, etc?

You may want to Google 'ketogenic diets' to see if you can find more information about specific foods.

As I'm sure you know, the low-carb, high-fat ketogenic diet is being successfully used with epileptic children to spare some of them meds and to help those who actually don't respond to meds. Doctors aren't even sure how it works, but it has lessened seizures considerably. Some epileptic adults are now doing it as well to get off the meds.

In any case, since this diet is being used so commonly for medical reasons, and with children who are growing, there are a lot of sites with information about nutritious high fat foods that you may find helpful to developing your own menus.

olive oil, flax, macadamias, pecans, and other nuts, coconut. Egg yolks. Tahini. High oleic seed oils like sunflower or safflower--it's different from regular sunflower or safflower--Eden Foods is one brand.

I forgot to add that I can't have nuts, either - no nuts and no cheese...I guess I won't snacking anymore...nothing's left! Thanks everyone for your suggestions!

Drink your fat if you can't eat much protein. Butter and cream or coconut oil and cream in coffee is delicious. You can get as many calories as you need in this manner. Just plan out your allotted protein and carbs for the day then fill in the rest with fat. I usually have one very high fat drink per day.

Dixie, Do you have a list of phosphorous values for foods and know the level you're allowed to have? I don't think you have to cut out all of those foods completely, though obviously you can't have large amounts of them.

But as far as dairy goes, I think there're some dairy foods that are worse than others. Like, I want to say cream cheese is better than hard cheese or vice versa. I have looked for a list but I can't find a good one.

No, I don't have a list, and I'm being referred to a kidney specialist so hopefully he will run the tests that show my levels for phosphorus, potassium, etc. Hopefully I will find out if I can get a little wiggle room in my diet - I know it's worth it but it's hard!

I hope you don't have to wait too long. I feel like that's pretty important info to get started eating right.

Have you bought any books about CKD? I haven't yet, but I'm going to soon. After I take the Bar exam in a couple of weeks, my big project is going to be to really get my diet in order, cut out any crap that's left (not much now), figure out this phosphorus and sodium stuff (I find the whole idea of figuring out the sodium part of it horrifying bc I feel like everyone has a knee jerk reaction that sodium is bad, but I don't think that's necessarily true). I am guessing that I don't have to worry about too much potassium bc I'm low carbing, which should be low in potassium, and my kidneys may not be damaged enough yet for it to be a problem.

Anyway... I am planning on ordering one (or more) of the CKD books off of amazon. I assume that they talk about the diet and would have lists of phosphorus and potassium levels in various foods. I can't believe how hard it is to find that online. You'd think it would be easy. Gah!

can you have cocoa powder?

a fat bomb made with coconut oil, cocoa powder, vanilla, and sweetener, then refrigerated or frozen, is terrific and has a LOT of nutrients, ie the calories you need to live on.

it is so concentrated that you can't eat a lot without getting too many calories though.

the other thing is vegetables with coconut oil or olive oil.

I don't eat any of that and still keep my fat up..(Cream but only a couple times a week..don't need it). Bacon and deli meats are overlyprocessed and not the healthiest choices anyway. Just use one of those online free calorie trackers and plug things in and mess around with the quantities and you'll figure it out.

Have you tried a forum for Kidney Disease? Maybe there are other things you can eat that you're not even aware of and people can give you more advice. It's such a limited food choice..I'd get bored. You don't even have that much to lose.. I wonder if there's any other way of eating that would work. Vegan/Vegetarian diet if you can't have meat and dairy..
You could eat salads with olive oil/vinegar dressings or some other high fat dressing..that's easy and filling. Protein shake(Maybe you can have vegetable protein if you can't have meat protein?) mixed with coconut milk..(I use Coconut butter..)

What about smoothies with coconut cream? The kind that comes in a can. I like the Whole Foods brand because it has a nice creamy texture and doesn't separate.

I also put it in coffee and make ice cream out of it.
