My 1st low carb cheesecake recipe....
I know there are lots of variations on this but I am on vacation away from home and needed easy.... Real easy.
12 ounces of cream cheese at room temp.
4 packets of Splenda
2 packets of stevia
1 tbs vanilla
Juice of 4 limes
1 pkg. of sugar*
1 cup HWC.... Very cold
With a mixer, or even a fork, mix first 5 ingredients together.... Very well mixed.
In a chilled bowl, beat the cream until it gets nice and fluffy. Mine would not get all whipped, so I added 1 pkg of sugar, and it almost instantly became whipped. Fold the cream into the cream cheese mixture, and garnish with lime zest if you like.
Put in dish and put in the fridge for at least an hour.
* I didn't have any more Splenda or stevia with me, but there was a pkg of sugar near the coffee pot, so I used it to make it whipped. My plan was to use a pkg. of stevia, but ran out. I guess stevia would have made it whipped.
On a scale of 1 to 10, I would rate this a 7..... Not as good as a real cheesecake, but a very nice substitute, and only 10 minutes to make it.
I would say this makes 8 - 10 servings.. It is so rich you can't eat a lot of it.
