Low Carb Camping Menu

With the summer upon us, our family is doing alot of camping and outdoor trips. I am trying to stay low carb but it seems all my usual "camping food" does not fit in with my LC lifestyle ie. sandwiches, chips, corn on the cob, watermelon, potato salads ect.

Anyone have any ideas of foods for the camping life LC style? Some easy, grill friendly, good ole campin food

I don't know if ya'll camp in a Tent or camper and have access to a fridge Or coolers? Grilled burgers, Hot dogs, chicken or steaks etc. Bring along salad fixings. Pork rines, beef jerky. You can basically cook whatever you do at home on a grill. Well to a point anyway Lol. we Love camping!

we are in a camper, but i don't wanna spend alot of time in there cooking or preping. we used to just grab pre made slaws, salads (potato or mac), and bags of chips all easy sides for dinner. i'm just not really wanting like steamed brocolli and side salad....doesn't feel very "camp like" lol

Cauliflower potato salad? Make it like you would any potato salad only use cooked cauliflower instead of potatoes - there are all kinds of recipes if you google it

This is what I brought for our day at the rapids. Lettuce, ham, turkey, swiss roll ups, hard boiled eggs, Babybels, aged cheddar and dill cream cheese stuffed celery. Maybe something like this would work for you?

I'd wrap veggies like zucchini, red peppers, onions, mushrooms in foil and cook them on the grill with your burgers etc. Lots of butter and spices would make them yummy. I'd keep lots of crunchy celery and cucumber around too for crisp side dishes, and I'd have portioned cheeses for snacks. Hard boiled eggs can be eaten as is, or made into devilled eggs or egg salad.

Just got back from camping.

What worked:
-Bought shredded slaw mix in a bag, made up slaw dressing (vinegar, mayo, a little sour cream, splenda, salt and pepper). Kept them separate and mixed at meal time.
-steaks. grilled chicken w/LC bbq sauce or an italian dressing. We had some sliced BBQ pork in the freezer to take, but I think a 2-3 lb hunk of pork loin wrapped in bacon would grill up great.
-foil veggie packets--onion, zucchini, tomato and mushroom. Or use a bag of broccoli shreds with butter or oil, salt and pepper. Asparagus on the grill. Just a plate of sliced tomatoes with celery, pepper strips, and cucumber slices makes a fine side dish for a hot day.

Slice cucumbers into half vinegar, half water. Pack of sweetener, a little salt and pepper. Chill overnight or longer.
Steam fresh green beans until not quite tender. Pack into mason jar with vinegar, salt, pepper, a couple cloves of garlic, and a good handful of dill or a tbl or so of dried dillweed. A little sweetener if you want it. Best if you give it a few days to get all dilly-infused.
Keep calm and carry on.
