Smoked salmon cream cheese dip
Hi everyone! I frequently lurk in the recipe section and have made many of the recipes with great success. I just made the almond-flax cracker recipe by Buttoni (thanks!) and wanted a dip to serve tonite. I had some leftover Alaskan sockeye salmon filet that I had for supper last night. I knew I wanted a salmon, cream cheese sort of dip and I modified one I found on the internet by The Barefoot Contessa. Thought I'd share.
8 oz cream cheese at room temperature
1/2 cup sour cream
1 Tablespoon freshly squeezed lemon juice
1 Tablespoon fresh minced dill (I used 1 tsp dried)
1 teaspoon prepared horseradish
1/2 teaspoon kosher salt (I used 1/4 tsp sea salt)
1/4 teaspoon freshly ground black pepper
1 teaspoon liquid smoke
4 oz fresh salmon filet baked, grilled, pan fried or whatever as long as it's cooked and minced (the original recipe called for smoked salmon...in order to get the smoky flavor since I was using fresh salmon I used the liquid smoke)
Cream the cheese in an electric mixer until just smooth. Add the sour cream, lemon,dill, horseradish, salt, pepper and liquid smoke, and mix.Taste the mix and see if it has enough smoky flavor for your taste. If not, add a little more. Stir in the minced salmon and mix well. Chill and serve with mixed crudites and/or crackers.

I bet you could also use drained canned salmon for this.
