Broccoli Slaw Recipes?

Hi there! I picked up a bag of broccoli slaw yesterday at the grocery store. I wasn't sure what I was going to do with it, but figured I would give it a whirl. I did some googling and found a recipe that I tweaked to make low carb. It (almost) reminded me of noodles as it really soaks up the flavors and has a similar texture in your mouth. Here it is:

Thai Peanut Chicken with Broccoli Slaw (creative name, right?)

Cook chicken in oil and some GF soy sauce, set aside.
Saute broccoli slaw until soft (or until desired doneness!)
Add chicken back in to the broccoli slaw mix, saute some more.
Add thai peanut sauce: 2 T PB2, 2 T GF soy sauce, 1/2 tsp of minced garlic, a few squirts of sriracha (to reach desired spice!), and a couple drops of EZ Sweets.
Add sauce to slaw/chicken mix - heat thoroughly! Enjoy!

Does anyone have other recipes or ideas to utilize broccoli slaw? Please share!!

I use it to add to my broccoli salad!
1 head of broccoli broken into small bite size pieces
1 pkg precooked bacon microwaved till crisp & crumble
1/2-1 C slivered almonds
1/4 c craisins optional but good
1/2 pkg broccoli slaw
1/4 small purple onion ( can use regular onion for less carbs)

Mix together

1C hellmans mayo
1/2 C Splenda
2 TBS red wine vinegar
Mix together & refrigerate

One hour before serving add dressing to salad & refrig till ready to serve

Mindy has the perfect recipe above..Or you can just use the broccoli slaw and leave out the broccoli.

I was waiting for Buttoni to post this since it's her recipe, but she might not be around and I fix it for a side dish quite often. Couldn't be easier.

Broccoli Slaw Stir-Fry

12 oz. package broccoli slaw
4 thick slices of bacon, coarsely chopped
Salt and pepper to taste

Brown the bacon until it has given up most of its fat/grease, but do not cook it to the real crisp stage. Add broccoli slaw and stir-fry until the broccoli threads just begin to wilt.

Makes 4 servings.

Thanks!! Those both sound awesome! I LOVE that broccoli salad and it would be delish with slaw in it too.

I saw a recipe on Pinterest for "spaghetti" using broccoli slaw, spaghetti sauce and meatballs... that sounds kind of interesting!??
