I just made this this morning and was thrilled w the results- esp as it is very very quick:
2-3 hardboiled eggs, crumbled
1 small avocado mashed into the eggs
Franks Hot Sauce (or other) to taste.
Mush them all together. That's it! tastes like creamy and delicious deviled eggs, without all the work.

There are many quiches that are really good and Really filling on Linda Sue's site. We particularly love the spinach and mushroom one. I usually add in either a little crumbled bacon, ham or sausage.
