I love CRUNCH!
I am a crunchy kind of eater! I love crunch in all my meals...crunchy fish, crunchy chicken, crunchy veggies...you get the picture. Crunchy can also mean more calories, so for crunchy sandwiches, instead of eating the chips with the sandwich, I eat them on the sandwich. So instead of 160 cals for a serving of chips, I can add 3 or 4 to the sandwich, get the crunch I love, and save about 3/4ths of the calories. I know I could get crunch with pickles, celery, etc, but it's just not the same as good ole salty chips!

Way too much time on my hands!

Carole - crunch is something I sorely missed while LCing! Pork rinds was about the only thing that gave me that same feeling, and I honestly was not wild about them. Nuts were great, but can't have too many on LC.
I don't do chips on sandwiches (rarely have sandwiches) but it's a great idea!

I am all about CRUNCH too! And I have always put chips on my sandwiches on UD's. I also make loads of crispy kale chips from my garden, as well as collard, spinach, Swiss chard and Brussels sprout leaves "chips". These really satisfy my salty/crunchy cravings and of course are totally healthy and I can do these on UD and DD's. On DD's I also eat these Scandinavian Fiber crisp breads that have 5g fiber and only 12 cals per slice. I usually put some LC cheese on 1 or 2 of them and they are filling for 60 cals.

Shelly, do you use a dehydrator to make your veggie "chips"? I was wondering if it was possible with no special apparatus.

Nope. No dehydrator. I just rip the leaves off the ribs (I save the ribs and stems to steam to eat later or to put into green soup). Then I toss a few cupfuls of the leaves in a big bowl with a tsp of EVOO and put them on a baking sheet for 10-15 mins in a 275 degree oven until they are crunchy. If I can't afford the 40 cals for EVOO I will just spray the baking sheet with Pam and spray a little on top of the greens with a few shakes of salt. I Hoover them right out of the oven!
I would love to get a dehydrator at some point so I could have these on hand but I'm in a small studio apt with a tiny kitchen. Just a note: best to use young, organic kale! The older, tough stuff can get bitter as it dries. |

Thanks, LCG, MARIKA and SHELLY S, for your suggestions. I will try to pick up some kale tomorrow. How long will the chips keep (if I don't "hoover" them right out of the oven!

I have no idea how long they will last! They've never made it past 10 mins!! Lol.

I make very large batches of kale chips in my dehydrator and I store them in an airtight container in the fridge. That keeps them nice & fresh!

I may have to look into a dehydrator, if I can find room for it when not in use. My kitchen is overflowing with stuff now...latest purchase was a soda stream. (Which I love, but may be drinking more diet coke because of it. I tell myself its better for me than commercial diet coke, since I use my own tap water to make it!
