Pickles

Did I find the perfect down day food.

I have the large dill pickles. Kiddo wanted one to eat and I read the label.

1 oz---0 calories

hmm

I just ate 2 large pickles.

while I know nothing is ever 0 cals.---this has to be ok to eat a few of them on a down day.

of course sodium is obviously there but drinking tons of liquid.

Is it ok to snack out on a few of these thru the day? It sure would help take that edge off a down day for me.

I eat pickle spears and each one is 5 calories so you can certainly enjoy a few spears on a DD.

well those 2 stupid pickles took the edge off.

wanted to get dinner going. starting to get hungry but eating those has stopped me from hunger right now. so I can eat later in the evening and be ok today

I buy kosher dill pickle spears in the gallon jar and keep it in the frig. DH and I both grab one if we think we are hungry but don't have time or don't want to eat and we are good to go.

I discovered those on my last DD, too. We have spears - I figure 2 = 10 calories. Quite the deal!

WOE: LC, MF and now JUDDD
Pickles are my best friend on my DDs - especially at work. Sometimes I get that lightheaded feeling too from fasting and those electrolytes in the pickle juice (read salt) help quite a bit! I have dipped my pickles in Chia seeds too. (but that adds calories).

I also just slice cucumbers, lightly salt them and have them as a nice crunchy salty snack.

Thought you guys might like this recipe. Super simple and makes the best darn pickles around!!!

~~~~~~~~~~~~~~~~~~~~~

Countertop Pickles
Cucumbers
1 large onion, sliced
1T crushed garlic
1 t mustard seed
4 heads of dill, 1 big bunch, or 4 T seed
1T peppercorns

6c water
2 c white vinegar
1/2 c salt

Quarter or slice cucumbers or use whole small cukes. Stand up in any 1 gallon plastic or ceramic container. Put the following in with the cucumbers: onion, garlic, mustard seed, dill, peppercorns. Heat water, vinegar and salt to boiling and pour over cukes. Leave on counter, uncovered for 3 days. Cover and refrigerate.

wow that is nice you posted a fresh pickle recipe. very cool...thanks

hubbys mom makes pickle chips. my kiddo loves hers. we are out right now and waiting for a new batch from her

It is great to know they are good down day food and very low cal.

Pickled okra is also good. You can make them according to the recipe above, or buy them in the grocery stores. I love olives too, but obviously they are higher cals.

I like mine with a wedge of the garlic & herb LC cheese. Obviously higher cals but I use that as a DD meal a lot, when I'm not doing the potato thing.

Call me neurotic, but I weigh my pickles and I go by 4 calories and ounce. A small Kosher Dill is usually about 12-15 calories.

You can pickle other veggies too - I've done cauliflower and carrots as well as cucumbers

Those are good but for a DD, I don't like the processed lunch meat enough to waste the calories on it. I do love me some pickles though! I've started using them as a bit of a snack on my potato days. Just 1 to try to last a bit longer before I eat again. No fat so technically should not interfere. And it hasn't seemed to slow me down.

I weigh my pickles as well. The Jar says 35 calorie for 100g, for me that is only 3 spears.

I buy the "real" stuff from the deli. I find that a slice helps my hunger sometimes better than just vegs alone. One ounce (of turkey or ham) is 25 calories.
