Calling All Potato Hackers--How Do You Plan Your Day?

I'm considering doing a 3-day PH. I am obviously working and want to be able to plan on having potatoes all day. I will not be counting calories, and will be eating to satiety. How should I plan ahead? Cook a lb tonight?

I boil the whole bag of Yukon golds at one time. They come in 3, 4, or 5 pound bags depending on the store I am in. Put them in the frig and I eat them plain with sea salt. Nothing could be easier. Of course, my DH has found the cold boiled potatoes and has developed a liking for them too straight out of the frig so I have to keep boiling potatoes to keep my stash intact.

I agree with Adi, cook a bag of potatoes, not just 1lb at a time. Try them out with salt, pepper, vinegar and/or mustard to see how you like them.

In case you have a problem with the potatoes alone (I did, which is why I incorporated rice), you might want to look at this recipe for congee (Yennie tried it and she liked it): http://www.lowcarbfriends.com/bbs/ju...l#post16394665

My DH is still following his Adi hack and taking his potatoes into work on DDs (but he also has the option of a microwave there if he wants to heat them and he takes in a small container of mustard dressing for extra dipping).

I also shred potatoes and cook a hash from them for him at night for his dinner on some DDs but that's fine for him because someone else is doing it, you might not want to be hanging about the kitchen if you don't have to (assuming that noone else is cooking for you). If you would like a hot meal in the evening then Yennie's potato bake with broth is in the potato hack thread I linked above. If you cooked that in the evening, you'd have plenty for a hot meal whenever you wanted it during the hack.

It depends whether you like them, which seems unhelpful.

DH is eating around 2.5-4lbs of potato a day. I scarcely ate 1lb a day even at the beginning.

I could probably eat more than a lb in a day. You said you don't have much of an appetite, right? I think I better plan for 2+ lbs because I don't intend to go hungry.

In addition to what's already been mentioned, I'll also take some yukons & microwave them at work. I take a bullion cube & make broth then have my microwave "baked" potatoes moistened with broth, and some salt. Occasionally with some A-1. I can't do them cold.
Also incorporate rice, both regular & the congee SS already mentioned.
I still can't do them cold.

See how different we are??? I have learned to love cold boiled potatoes and actually prefer them over a nice hot baked potato. The only way I like better than cold boiled is the microwave chips but I can eat 5 pounds of russets as microwave chips so I don;t make those except on UD's anymore.

I too, boil a bunch at a time, and I love beef bouillon cubes to flavor them. I try to sprinkle fresh parsley on the taters afterwards, or some other very l.c. herb for added vitamins and "freshness."

On rare occasions, I drizzle no more than 1/4 tsp. oil on the potatoes before eating. For a health-promoting change, I add a sprinkle of curry powder or nutritional yeast.

I'm going to do a DDH tomorrow, and depending on how that goes, maybe more than one day. I am boiling a bag of the small yukons. A bag, according to the label, is 450 calories. I may use spray butter for 0 cals, SCQ sparingly, and chicken broth...also maybe lemon juice, mustard, etc. Will hold off on FF greek yogurt because I did see the warning about protein.

lemon pepper is also good. The less good tasting the better in my opinion. You will eat more if it tastes really good.

Just an FYI that the 0 cal spray butter has about 900 cals for the whole bottle. Used within reason, no problem.....but I went to grad school with a girl that was on WW. She'd take the top off and pour the whole thing on her food.......saying "but it's zero cal!".......umm, not really.

Food labeling can be very misleading, unfortunately.

Yeah I've heard that, tofu. I don't usually spray more than 3-4 sprays and never take the top off. That's probably about 20 cals, but I count 0.

My next hack will be boiled potatoes! I loved the ease of the roasted potatoes, but didn't like the skin on them, even if I peeled them first they still have a tough outer layer. So I will boil them. Hoping I like them better because I want to go for longer next time.

I boiled the 1.5 lb bag in beef broth, and taking about half that to work. It's technically going to be a DD, so it will be more than I usually eat. I hope I don't start craving food like crazy, like I did the last few times I tried it.
