A fair number of UK food writers and food bloggers are following 5:2 with considerable success. Some of the newspapers have a regular 5:2 recipe column (eg, Xanthe Clay in The Daily Telegraph).
She's in SA but Claire of Under the Blue Gumtree (blog) also has some very good 5:2 recipes.

I tried a 125 calorie recipe the other day that was very good...it is an omelet, made with egg substitute.
1/2 c. egg substitute
1 clove of garlic minced
1 t of chopped basil
1/4 c. FF ricotta cheese
1 t onion powder
1 t red pepper flakes
pour egg into a small frying pan set on med. While it cooks, mix ricotta with spices and garlic...flip egg when it's starting to brown, or how you like it set...when egg is done, spread cheese mixture on top of egg and turn off stove. As the cheese warms it's easier to spread...fold egg over the cheese and slide onto plate! Enjoy. (I added some salsa on top of mine). Delish! Oh, Sea salt to taste.
