Threw together a homemade creamy chicken soup

OH BOY....!

I just wanted to share. I get so excited when I throw things together on a whim and it comes out GREAT!

I made a roast chicken in the crockpot this weekend and made a big batch of chicken stock with the carcass. Tonight I seasoned the stock with some salt, pepper and lots of thyme. I added some chopped cooked chicken, diced carrots (just a few) and a generous splash of heavy cream. Quick and simple, but delicious!

Sounds spectacular! BTW, your avatar pic has 2 beautiful cavaliers in it. We have a CKC too! We are crazy in love with her! They are such gentle companions. Such beautiful dogs too.

Oh, you're kidding?! Thank you! Yes, these two are my first babies. They are brother and sister. Such a WONDERFUL breed! I have had Cocker Spaniels most of my life, but now I am convinced that my family will always have a Cavalier in it.
