DUTCH BABY PANCAKES

Good morning. My pancakes this morning got triple AAA
from me and my guy and our neighbor. It's a little tweak from
a recipe by Vicki Allwardt from the Low Carb Friends cookbook,
volume #2. It rose up and didn't fall and it made 4 big wedges.
Jay at 2 but I stopped with one. Here's how to do it.
Thanks goes to Ms Allwardt for the original recipe.

Dutch Baby Pancakes
Preheat oven to 425 F (220C)
Have a 10" Cast Iron skillet on the burner and melt
a couple tbs. of melted butter/oil. Get it hot.
In the bowl of a food processor place the following ingredients
in order given. Sooo simple and delicious!
4 extra large eggs
1 c. of Lc milk,or milk/cream/or coconut mik
2 tbs. melted butter
1 tsp. vanilla extract
Whirl until mixed.
Add:
1 c.Jen's Gluten Free bake mix (look at Gluten Free Bake Mixes)
1/2 tsp. baking powder
1/4 tsp. salt
2 tbs. your favorite sugar sub.
1/2 tsp. cinnamon
Process until smooth
Pour batter into hot oil. Place in oven and bake about
15-17 minutes. It will puff up. Cut into 4 large wedges.
Serve with hot maple syrup. I add cinnamon to the syrup.
We served it with applewood smoked bacon and one basted egg.
It was a wonderful brunch.

Hey Tweaker

That was gluten free. Do you make the one with six eggs and CarbQuick?
We had that one this morning. Made in 9x13 pan, it too was delish and
serves 4 big eaters or 8 smaller eaters
These recipes can be used as shortcakes or bases or
berries. That is if you have left overs?

Barbo - Mine wasn't gluten-free. I used high gluten flour because I found some in the cupboard that I wanted to use up. I used only 1/2 cup (12 carbs), butter, 3 eggs, cream, water, vanilla, cinnamon. 4 servings.

Wow Barbo...sounds great! Think I'll plan to try that on Sun. night--we usually have "Brunch for Supper" for anyone who shows up to eat that night. Sometimes have to open up the big dining room table, there are so many (normally just the two of us!) And they're NOT lowcarbers! They just call it Good Home Cookin'--they like that it's from scratch.
I was wondering-- if you wouldn't mind--could you post the recipe for the one you've referred to with the 6 eggs and Carbquick, please? I must have missed that one, and I think the larger might work out well for the size group we often get.

I always know to check out your posts right away, Barbo. Always know that your recipes are t-n-t, and they've never failed me. I don't even have to try them first...I just know if you say it works, it does!! Thanks for all the times you've made me look good... And ALL the good cooks here, this is such a great board, of truly helpful people...makes lowcarbing SO easy! Jennywren

Chicken Lady German Pancake

German Pancake

Ingredients
· 1/4 cup butter
· 1/4 cup coconut flour (I used Carbquick)
· 2 teaspoons cinnamon
· 2 teaspoons vanilla
· 1/4 cup Splenda
· 1 cup milk
· 6 eggs
· 1/8 teaspoon salt

Directions
1. Preheat oven to 375°, melt butter in a 9x13-baking dish.
2. In a medium bowl, beat the eggs with the Splenda, cinnamon, vanilla, salt and coconut flour until smooth. Add the half and half and mix well. Pour the mixture into the prepared baking dish.
3. Bake on center rack in the preheated oven for 25 to 30 minutes, until golden brown.

Thank you Barbo! Planning to include this for tonight's lunch...with your endorsement, and Chicken Lady's name on the recipe, I have no worry that it'll be good. The lovely strawberries from California are in our produce markets here, and I'm going to provide some alongside this pancake-dish for a topping! And that's what I'm having, for sure!

Again, appreciate your trouble to post this for me on such short notice.

It has been a while since we enjoyed these pancakes. Thanks for bringing them back! The larger baking dish sized recipe will be nice for brunch.

I recently read about a pancake batter being used in muffin tins. The cups are filled just 1/2 full, and the result is a crater that you can fill with fruit. I think that this recipe could be used for this, and will give it a try.

THANKS DOTTIE

For bumping this recipe. It's a good one and whenever we get the
urge for pancakes I go to this. It's easy, no fuss, not much clean up
and good each and every time. If you are on maintenance, try some
cooked apple in them.

Well I tried the headlining version last night and it didn't work sadly. I waited for it to puff up, but ended with a thick and super stodgy pancake. I altered Jen's mix only slightly to make it grain free, subbing arrowroot flour for the oat flour.

I'd love to try again with the chickenlady's recipe. Can someone tell me: does this one puff up? What's the final texture like on it? Appreciate your help

I refuse to give up on the German pancake dream...
