Today I haven't eaten yet. I couldn't stop eating yesterday. I think I plan on having:
B-coffee, sweet n low
L-coffee, sweet n low, 2 hb eggs
D-I think I'll allow for, salad w/walden farms thousand island dressing and a tilapia fillet, and I have a huge bowl of soup (it's mostly broth) with some of Buttoni's dumplings.
S-maybe some celery and green beans w/ranch (made from a seasoning packet and a greek yogurt cup)

Sure! I love this recipe, it's so easy and versatile.

Brown a pound or two of chicken thighs in coconut oil & salt/pepper, then add a bunch of garlic (I use 1/2 bulb), then cover with chicken broth and simmer until the chicken can be easily pulled apart into shreds. Then you can either drain some of the broth if you want a thicker dish or leave it for soup. Shred the chicken, add a can of diced tomatoes, a jar of sliced kalamata olives, a few teaspoons of capers, and a splash of lemon juice. Sometimes I throw in a thinly sliced lemon and let that stew for awhile. You can either let it cook longer or serve immediately.

This also freezes really well.
