Wilted Bacon Slaw
The original recipe of this was in the paper last week and I finally tweaked it and tried it last night. It was really great. And honestly, I think the dressing part of this would be good on anything.
The hardest part was shredding the cabbage very fine. The next time I may try one of those bags of angel hair slaw mix. Then it would be a snap. I served it room temperature last night with dinner, but it was still great cold today with lunch.
Wilted Bacon Slaw
1 small green cabbage (about 1 ½ pounds)
2 bunches green onions, white and light-green parts only, thinly sliced
½ pound thick-cut bacon, diced
2 large shallots, finely diced
¼ cup olive oil
¼ cup sherry vinegar
2 tablespoons sweetener
1 teaspoon white pepper
½ teaspoon salt
1 tablespoon Dijon mustard
3 tablespoons heavy cream
Finely chop or coarsely grate cabbage. Place cabbage in a large bowl with scallions and stir to combine. Salt to taste.
Fry bacon over medium heat until crisp. Transfer bacon to a paper-towel lined plate and set aside.
Discard all but 2 tablespoons of bacon grease from pan and add shallots. Cook until soft, 2-3 minutes. Whisk in oil, vinegar and sugar; then turn off heat. Whisk in pepper, salt, mustard, and cream.
Pour warm dressing over cabbage mixture and stir to combine. Stir in crumbled bacon.
