Easter menu

For those who celebrate it, Happy Easter!

While I am not staying strict low carb today, I'm curious to hear what creative low carb options folks are making today!

My menu:

Roasted turkey basted with fresh herb butter
Baked ham
Green bean casserole (low carb style)
Mashed potatoes and gravy (not LC)
Herb stuffing (not LC)
Sweet potato casserole
Dinner rolls

Dessert is LC cheesecake with fresh berries and chocolate cake for those not counting carbs.

For me it's Easter dinner at the in-laws. I'm not sure what all is on the menu but they are trying out a low-carb lifestyle so it should be good, and my MIL likes to put on a big spread. I think she said ham would be the main event. I'll have to drink a gallon of water tomorrow to flush out the salt but that's ok.

I am in charge of dessert. I've made a LC chocolate mousse pie with an almond crust and a pineapple dream cake for the carb-eaters.

We're having Easter with friends, which usually means lots of Polish food - I'll have the sausage and skip the pierogis (little potato-filled dumplings). I made some Asian-Polish fusion red cabbage and some deviled eggs - which are good enough I'm looking for an excuse to make more soon. (Here's the recipe I used: Kittencal's Best Deviled Eggs Recipe; I also tinted the egg whites with food coloring.)
