I got inspired to make one and it was really yummy, so I thought I'd share the idea, since we are always looking for something different but easy. Its a perfect all-in-one thing to take for easy lunches. You can serve it over lettuce if you want.
This was my version- obviously, feel free to add in your own meats or veggies.
1 bag frozen cauliflower broccoli mix, cooked in microwave about 3 min until tender.
1 jar marinated artichoke hearts
1 jar roasted red peppers
2 tomatoes, diced
1 cucumber, peeled and diced
Cubes of provolone cheese
Cubes of deli turkey (yeah, I know... Italian meats would be better here, like some pepperoni, salami, ham, etc. I'm trying to not eat nitrites)
Italian salad dressing - I used Olive Garden brand. Can also just use red wine vinegar/olive oil/salt/pepper
Italian herb blend (dried rosemary, red pepper, garlic, oregano, who knows what else was in there)
Dump into bowl, add salad dressing, and mix it up!
*Note: Its really easy to go to the deli counter and ask them to slice a 1/2 inch thick slice of whatever deli meat you want to cube up to put in here. You can ask for the same thing for cheese.
This thing took me about 5 min to cut up and assemble!
