Jicama Fries - I'm in Love lol

They are SO good. I can't believe I never heard of Jicama before this week. They are low on the glycemic load scale and full of fiber! omg SO good. Anyone else eat this?

This time we sliced them up like fries, put olive oil on them, cajun seasoning and garlic salt. Then baked them until crispy. SO good.

One of the mexican restaurants in our area will let you sub raw jicama sticks for tortilla chips when you order the guacamole. Makes it a bit easier to say "yes" to mexican.

I love jicama fries! Also good raw,sliced in sticks with fresh lime and salt. And i ate a jicama relish served with tilapia at Charleston's once that was really good.

There is a recipe to coat the fries in melted in coconut oil and sprinkle with cinnamon and then bake. We'll have to try that one too.

I bought one earlier tonight to make fries! Also a daikon radish for grilling some "potato chips", and regular radishes for "boiled potatoes". Such good alternatives to the starchy potato.

You might have to ask the produce guy in the different grocery stores, I had trouble finding some random items, simply because I didn't even really know what I was looking for. :/

Awh, that sucks. It took me about 3 months to even find almond flour, just had to keep checking every store I went in, eventually, there it was. Lots of low carb staples have been that way for me, hard to find, but I just keep checking every time I'm in a store.

The WalMart in our small town sells Jicama, but we have a large population of Hispanic Americans, so that would follow.

I've tried jicama as hash browns as debstin mentioned. In my experince the thinner the slices the better as far as frying them. But I agree they are delcious!

The baked recipe with co and cinnamon sounds interesting , will have to try that.
Have been wanting to try daikon radishes as ff or in with roast, but live in a rural area and have not found any yet.

I can't believe how much it fills you up and for a long time! However, with that said, the next day I ended up with the stomach bug and hubby thinks it was from the jicama and all that fiber. I was nauseous for two days so I am pretty sure it was the bug and not the jicama. He had me all worried I wouldn't be able to eat it again

We have been making jicama chips for a long time.
I posted it here quite a long time ago.

Get a large jicama. I got dh to use our mandolin to slice it
paper thin. We have a deep fryer and I filled it with peanut
oil. Deep fried until golden brown. Lay on paper and sprinkle
with salt, pepper and organic onion powder.

You just can't stop eating them.

My sister couldn't find them in NJ until I told it was a mexican root vegetable and what it looked like.

Here's another good way. Peel and slice thin then julienne , put in a bowl. Pour a 1/4 c. Davinci Apple syrup. They taste like apples. YUM.
She says they are good with raspberry syrup too.
